Carrot Cake III

The was great carrot cake! I substituted half of the fat for applesauce and used whole wheat flour for added fiber. It was amazing!

Instant Pistachio Salad

Very good pizza crust. I cut the amount of yeast required in half (for a thinner crust) and added 1 teaspoon of soy lecithin for better mixing. It didn't rock my socks off, but it was a decent homemade pizza crust. The main downside was that there was not a lot of bubble definition in the cooked crust, even with a pizza stone.

Amazing. Nothing else to say, really. Was a huge hit at Thanksgiving. Rich and creamy. Tastes like it was bought in a store, without the chemical aftertaste.

Iced Pumpkin Cookies

I made these for Thanksgiving, and they were a hit with kids and adults alike. I made with whole wheat flour and replaced half the butter with applesauce. They were amazing this way, and healthier too! Also, I added 1/4 teaspoon ground cardamom and 1/2 teaspoon ground ginger along with the other spices. Lends the cookies a bit more depth.

Chocolate Chocolate Chip Cookies III

Delicious. Soft like a brownie, yet still a cookie. Very chocolaty. I used whole wheat flour, and replaced half the butter with applesauce, and it came out beautifully. A 3 tablespoons of half-and-half added to the melting chocolate chips makes the cookies even more creamy.
