Chocolate Cornstarch Pudding

This was a very easy recipe and my family like it. I was a little hesitant about putting so much cornstarch in, so I reduced it by half. The texture was very creamy. However, it didn't thicken up as much as I'd hoped. I will definitely put more cornstarch in next time.

Mafioso Chocolate Cake

This cake was awesome! I was so tired of the weird taste that boxed cakes have, so I decided to try this one. I highly recommend using cake flour as the recipe indicates. This flour makes the cake so light and delicate. I used a buttercream frosting the first time. However, I can't wait to try the La Famiglia Chocolate Frosting that's included with the recipe.

Ruth's Grandma's Pie Crust

This recipe was easy to make. The crust had a good flavor and texture and everyone who ate it really liked it. However, it was difficult to work with because the ingredients did not yield four pie crusts (as stated by a previous reviewer). When I separated the dough into four equal pieces and tried to roll it out, it was almost impossible to get the crust large enough to fit in the pie dish. I had to roll it so thin that it started to dry out and split. I managed, but if you're just beginning your pie-making adventure, you may find it frustrating. I'll use the recipe again, but I'll remember the amount of dough will make three pie crusts generously.

Amish White Bread

This recipe was awesome! It was the first time I have ever made bread and it came out perfectly! I don't care for overly sweet bread, so I took another reviewer's advice and reduced the sugar to three tablespoons. I used my regular beaters to mix in the salt and oil and then switched to bread hooks when I started adding flour. When the flour was almost all mixed in, I turned the dough out onto a lightly floured surface and kneaded it for two or three minutes. Every step went like clockwork and there was very little mess to clean up. The bread hadn't even cooled enough to handle before my family was begging for slices of it. The texture was perfect. The shape was perfect. The taste was perfect!

Old Fashioned Pineapple Upside-Down Cake

This is THE BEST pineapple upside-down cake I have ever made or eaten! I really wanted a cake recipe that didn't call for a boxed cake mix. This one came out perfectly. I, too, used my iron skillet. I made two small additions: I folded 1/4 cup of pineapple juice and 1/4 cup of sour cream into the egg whites along with the yolks and flour mixture. My cake needed about 40 minutes to cook, but it came out just right. This recipe requires a little more work than using a recipe that calls for a boxed cake mix, but it is SO worth it!

Scalloped Potatoes II

This was a wonderful and easy recipe! My family devoured the entire thing during one dinner. The only thing I added was shredded cheddar cheese to the top during the last five minutes of cooking.

Fluffy Pancakes

***EDITED*** I previously complained the batter was too thick. However, I tried these again, making them according to the directions, and the thick batter actually makes these makes these perfect. I used the "sour milk" method in place of buttermilk and it is a perfect alternative (I'll never buy buttermilk again). I will definitely make these again.

After-Thanksgiving Turkey Soup

Apple Crisp II

My family really liked this recipe. I made according to the directions and it came out perfectly. Other reviewers stated their recipe came out too watery. I didn't experience that. There was some juice in the bottom of the pan, but not enough for me to take much notice. However, when I added the water, I poured it very slowly and evenly over the cinnamon and sugar that was on the apples. I also let the water sit on the mixture for a few minutes while I mixed up the topping. This one is definitely a keeper.

Peanut Butter Bars I

These bars are OH SO rich! They are also quick and easy. Next time I make them I am going to try to shape the peanut butter mixture into balls and dip them in chocolate. If it works, they'll make great gifts at Christmas time.

Buttercream Icing

This icing in fantastic! I, too, used a cup of butter rather than 1/2 cup of butter and 1/2 cup of shortening. The icing was nice and firm. It spread well and stood up to being piped through a decorating tip. It's definitely a keeper!

Buttery Soft Pretzels

These pretzels were really fun and easy to make. My kids loved them and ate them as a snack. I made them according to the directions and they came out really well. However, they were a little sweet for me, so I'll definitely cut down the sugar the next time I make them. The directions state roll each piece of dough into a rope. I found it was difficult to roll the dough on a lightly floured surface. I needed the dough to be just a "tad" tacky to roll properly.

Banana Pudding IV

This pudding is AMAZING! It's the first time I have ever made or eaten banana pudding. It was so good. My husband loved it. All he could keep saying was, "Mmmm. Mmmm. Mmmm." I'm so glad I found a new way to get rid of my ripe bananas.

Chicken Enchiladas I

Baked Teriyaki Chicken

This dish is super easy to make. We love it. The sauce is rich and thick. However, to save myself aggravation, I line my cooking sheets with foil and grease the foil. It doesn't matter how much you grease a baking sheet, you will have to scrub ... a lot!
