Taco Pie

My family loved this as is, but I (of course) had to dink with it. If I'm going to make a casserole, I want it to be all I serve, so it needed some veggies. I mixed the sour cream in with the cooked meat, added a can of corn and a can of either diced tomatoes or rotel, depending on what I have. Layered that on the crescent roll crust, topped with cheese and baked. Served with guacamole and salsa--family asked for it again, so it's a keeper!

King Ranch Chicken Casserole III

4 stars as written. I adjusted to our tastes-- no broth. Sub sour cream, about a cup, instead. 1 sm can tomatoes with chilies, 1 16oz can diced tomatoes. The liquid from the tomatoes made the mixture thin enough without the broth. Skipped the pepper, used more onion and my homemade Mexican seasoning. Layered in the cast iron skillet I cooked the chicken in--oh and used cojack cheese.

Aussie Chicken

"can I give it more than 2 thumbs up?" my honey asked. I cook in cast iron, so just used same skillet into the oven and saved a dish. I have my own sweet mustard sauce I make, so didn't stay faithful to the recipe there. Only other change was adding onions to the mushrooms and sautéing them in wine. YUM! Prep seemed to take a while, I may play with making this a casserole with the same flavors and see if it goes together easier.

E-Z Drop Biscuits

Love these biscuits! Using this recipe I can have biscuits, gravy and scrambled eggs on the table in 15 minutes on a weekend morning. For a little more savory, I add granulated garlic and onion. Usually omit the cream of tarter, don't notice any difference without it.

Mom's Zucchini Bread

Wonderful recipe! We omit walnuts and add a cup of chocolate chips for personal preference, and bake as muffins for 20 min. Works equally well with fresh or frozen zucchini.

Seafood Enchiladas

My wife made these wonder Seafood Enchiladas for us one night. Altering the recipe with our refrigerator contents and personal tastes. She used bacon grease instead of butter and added mushrooms to saute the onion. She used heavy whipping cream instead of half-n-half in the sauce, and cojack instead of colby cheese, it's what we had on hand. She double the sauce and added just a bit to the seafood mixture. I'm very happy that she is making them again tonight, as otherwise I'd be craving them for who knows how long. You gotta try these if you like mexican seafood dishes. :)
