Taco Pie
My family loved this as is, but I (of course) had to dink with it. If I'm going to make a casserole, I want it to be all I serve, so it needed some veggies. I mixed the sour cream in with the cooked meat, added a can of corn and a can of either diced tomatoes or rotel, depending on what I have. Layered that on the crescent roll crust, topped with cheese and baked. Served with guacamole and salsa--family asked for it again, so it's a keeper!

King Ranch Chicken Casserole III
4 stars as written. I adjusted to our tastes-- no broth. Sub sour cream, about a cup, instead. 1 sm can tomatoes with chilies, 1 16oz can diced tomatoes. The liquid from the tomatoes made the mixture thin enough without the broth. Skipped the pepper, used more onion and my homemade Mexican seasoning. Layered in the cast iron skillet I cooked the chicken in--oh and used cojack cheese.

Aussie Chicken
"can I give it more than 2 thumbs up?" my honey asked. I cook in cast iron, so just used same skillet into the oven and saved a dish. I have my own sweet mustard sauce I make, so didn't stay faithful to the recipe there. Only other change was adding onions to the mushrooms and sautéing them in wine. YUM! Prep seemed to take a while, I may play with making this a casserole with the same flavors and see if it goes together easier.
