First, let me say I am a newbie at baking anything. Actually, this is the first cake I've ever baked. I went out and bought a spring form pan just for this!
I followed the recipe exactly to make the filling. The only changes I made were to use the graham cracker/butter/cinnamon/sugar crust (good call!) and I set the oven at 325 using a water bath. I did bake the crust alone for 10 minutes while mixing the batter.
Let me just say wow! There was no browning at all, no cracking at all and it came out creamy and delicious! The taste was truly great. I can honestly say this is restaurant quality (better than most restaurants) cheesecake!
The only problems I had were 1. I made a pretty big mess - I am a newbie to this! and 2. it was difficult to get the crust to peacefully separate from the bottom of the pan - I think this was exacerbated by the little lip around the pan. Therefore I couldn't transfer it to a serving plate as planned. I had to cut it in the pan bottom and then I could get a nice piece, crust and all. I think next time I'll try using a 9" parchment round paper in the bottom to help with this.
Edit: Last time I flipped the bottom of the pan to get rid of the lip (like I said, I'm learning) and did use parchment paper. It was a piece of cake (pun intended) to remove from the pan this time!
