Roasted Brussels Sprouts

Chocolate Chip Mini-Muffins

My 12-yr-old daughter made these and found the recipe fun and easy. However, when she bit into the muffin, she found it too filled with air...not "cakey" enough in texture. We did substitute margarine for shortening, so this might account for the slightly drier texture. But, we used good-quality chocolate chips, so that helped boost the taste and will ensure they all get eaten!

Mock Champagne

Nice, clean taste, but it didn't receive any rave reviews at a recent baby shower. Didn't see anyone go back for seconds. Not that it tasted bad, by any means, it just didn't have much "punch."

Peppermint Patty Brownies

These were a huge hit at a recent baby shower, even the husbands who dropped by later couldn't resist. Great chocolatey taste that is not overpowered by the mint. The fact that the chocolate around the mint melts into the brownie, but the mint layer remains whole makes for a lovely appearance. Slice in squares then into triangles to show the peppermint. Made these two days before the shower and they stayed lovely and fresh.

Macadamia Lemon Bars

Light lemon flavour and crispy topping. I drizzled dark chocolate on these as an added treat and to enhance the look on the plate. Would prefer a stronger flavor of lemon over macadamia nuts, so next time might try increasing the lemon juice used and not putting the nuts in the base.

Butter Tart Muffins

Moist texture with crunchy exterior. Much closer to bread pudding in flavour than a butter tart. Definitely enhanced by the flavour of the maple syrup. I made these in mini-muffin tins for a Tea, reducing the cooking temperature to 350 and the cooking time to approx. 11 minutes.
