Baked Sweet Potato Sticks

I love these. I cut my potatoes into much smaller slices than one quarter, more the size of regular french fries. Because they were smaller, it took them only 20 minutes to bake. One large sweet potato was enough for two people (as a side dish). Very good!

Butter Chickpea Curry

This recipe is really good, and easy to make. I didn't have any garam masala, so to substitute, I used: a dash of cinnamon, a dash of nutmeg and dash of coriander. And instead of using a real onion, I used onion powder. It tasted just like dishes I've had in Indian restaurants.

Greek Lentil Soup (Fakes)

This soup tastes great AND it's healthy! My husband thought it was "okay, a little too healthy-tasting" but I really liked it. Since soups usually taste better the day after they are made I made it a day ahead and I loved it. I used vegetable broth instead of water.

Chocolate Cream Cheese Frosting

I made half a recipe for this to frost one dozen cupcakes (there was a bit of frosting leftover). Also, I omitted the chocolate to have vanilla frosting. Good and easy, and without all the preservatives and weird ingredients that are in store-bought frosting. Since I only needed 1 TB of evaporated milk, I froze the rest of the milk (it lasts for up to 2 months).

Jamaican Spinach Soup

This soup tasted MUCH BETTER the second day. It took a lot of time to chop all the veggies. It has an unusual taste but I love that it is super healthy.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce
