Old-Fashioned Peach Cream Pie

Awesome Carrot Cake with Cream Cheese Frosting

Gave this only 4 stars b/c I made a substitution. After reading lots of the reviews, I subbed out one cup of the oil with unsweetened applesauce. Now I didn't taste this myself b/c it was a Thank You gift for my husband's office but the comments I got back were amazing and included converting someone who doesn't even like carrot cake to someone who had 2 slices! It was moist and delcious! The pineapple is the key! Great recipe!

BBQ Pork for Sandwiches

My husband who grew up on "Cajun Microwave" BBQ pork thought this was fantastic!! I got rave reviews from my in-laws as well. So tender and delicious! I used beer and broth and while it smelled funky when I got home, it tasted amazing! So tender! This is a definite keeper! Thanks!!

Easier Chicken Marsala

This was so easy and so delicious! I decided to add some half & half, garlic salt, & pepper to the sauce and it was just the right touch. I think next time I'll double the sauce b/c it was so good and just not enough after pouring it over some angel hair. I used cutlets instead of breasts to cook quicker. Leftovers today were fantastic!

Cuban Midnight Sandwich

These are easy & delicious! I used my iron skillet to flatten the sandwiches and they came out perfect. I used a minimal amount of light mayo and less than a Tbl of olive oil on the bread to cut back on calories & fat. I also cut back on the amount of meat & cheese. Used the sandwich slices of dill pickles. Paired it w/ Black Bean Soup II and it was a perfect meal! Definitely a keeper!

Black Bean Soup II

I used just one cup of water b/c I read the directions wrong and the puree came out well but 2 cups may be better. My husband and I like chunky soup so I only pureed 3/4 of the soup and mixed it in w/ the remaining veggies. SOOO delish! Made it w/ cuban midnight sandwiches as recommended in the best dinners cookbook. Lunch leftovers are superb!

Annie's Fruit Salsa and Cinnamon Chips

Wow! I hosted a family party this weekend and the only thing to disappear was this salsa! I only gave it 4 stars because it was awfully sweet and I only added 1T of sugar instead of 2, next time I may not add any. I took some other reviewers advice and used apricot preserves and diced the strawberries and kiwi w/ an egg slicer - what a time saver! I also coated the apples in lime juice to prevent browning. Will definitely make again! And man are people impressed when you tell them you made the chips yourself! I got major brownie points w/ the in-laws!

Jimmy Dean Three Pepper Sausage Corn Cakes

I would have given this a 5 but it was a little dry. I mixed some salsa & sour cream for a nice dipping sauce and that helped with the dryness. Serve a large group, this makes a LOT of food.

Tiramisu Layer Cake

This was much easier than it looked! I was anxious when making it b/c I didn't let the cake cool long enough so it was difficult to ice w/ the whipped cream but I found that shaved chocolate on top hides most flaws. And it tastes too good to care what it looks like! I will make this again and again, a light & fluffy delight!

Easy Minute Steaks

My husband loves this dish. I make it with venison cube steaks and serve over mashed potatoes. I also add sliced mushrooms to the soup and some flour to thicken it up a bit. It is so easy and a great comfort food! Thanks for a recipe for cube steak that doesn't require frying!

Apple-Raisin French Toast Casserole

Grandma's Pork Chops in Mushroom Gravy

This took a while but it was pretty good. I used 1/2 cup wine and 1/2 cup apple juice like others suggested and wasn't really happy with the sweetness. I think I'll add some garlic salt to the gravy before cooking. Overall both my husband and I enjoyed it and will definitely make it again. I served it over whipped potatoes which was great.

Mushroom Stuffed Chicken Rollups

This was tremendously juicy and tender chicken! I just loved it! I substituted cream of mushroom soup for the cream, added garlic to the mushrooms and served over rice. Delicious! Definitely a repeater!

Baked Vegetables I

This is so easy and delicious! I've done it w/ potatoes, carrots, squash, mushrooms, broccoli.....it never fails! I've found it's easiest to put the veggies in a big bag w/ the oil & seasonings and have fun shaking! I also put the potatoes in a separate pan and cooked them a bit longer than the other veggies. Such a flavorful alternative to steamed vegetables!

Delicious Ham and Potato Soup

I didn't have ham but it was excellent none the less! If you want a milder soup, I'd suggest a bit less peppper as it had a bit of a kick to it. I topped it with cheddar cheese and bacon bits. My husband called it "exceptional"!

A Hearty Green Bean and Sausage Casserole

This was excellent! I made it for a dinner party and it was a big hit. Even the leftovers were tasty! I added a package of fresh mushrooms while cooking the sausage. The garlic and soy sauce give it wonderful flavor! The best I've ever tasted, thanks!!
