Sicilian Brasciole a la Lena

Okay, gotta admit, I would never have even heard of braciola if I hadn't seen Everybody Loves Raymond. So kudos to Debra for getting this to taste right, because it is quite a tricky recipe, but fantatsic when it's done. It took some time to tenderize the meat and get the ingredients the way I needed them, but after rolling the meat and getting them simmering in the sauce, it's just a waiting game. I substituted dried cranberries for raisins, which were tart and sweet and my dad and sister's favorite parts of the inner stuffing. A wonderful Sunday meal to make with extra pasta I had lying around the kitchen.

Rice with Herbes de Provence

Excellent side dish with the Mediterranean Lemon Chicken I made. Nice fluffy texture and the herb mixture was very tasty. I found the broth and herbs clashed a tiny bit, so maybe I'll change up the mixture a bit next time and maybe add lavender to the herbs as well. This is so simple to make that you can play with it to make to personal taste. Still easy to make and very good with any chicken dish.

Mediterranean Lemon Chicken

This was my first stab at cooking for my family, something I try to do once a week and give my mom a break from all the kitchen stuff. So I thought I would try something simple and very different from the regular family meals we have, and came across this recipe... I am SO glad I did! I allowed the chicken to marinate for a few hours before putting it in the oven - this allowed the lemon juice to be absorbed and made the chicken so tender it almost fell apart while I was serving it onto plates. The lemon-garlic-oregano mix provided a suculent and tangy taste to the chicken, which even my picky younger sister asked for more of! Serves well wih potatoes or rice! I'll be making it again by popular request!
