About this Cook
I live in "the South" where I am blessed to be married to Mr. U since December of 1998. He is my "guinea pig" when it comes to cooking and loves for me to try out new dishes as well as serve his old favorites, too.

Homemade Mac and Cheese
I've been making this recipe for our family for at least 6 years and we still love it! I used to make it exactly as written and it was WONDERFUL!!! Over the years, however, I decided to add a bit here and there to see how it would be. I added 1 cup more cheddar, 1/4 cup more parm, 2 cups of shredded mozzarella, 1 tsp garlic powder, and 1/4 tsp dry mustard. PERFECTION!!! And to make it a meal instead of a side dish, I'll add in 1 pound of diced, cooked ham. WE LOVE THIS!! Happy cooking!!! :)

Stuffed Peppers
Made recipe as written. Bland. Definitely needs more flavor. And I read several reviews saying to thin out the tomato sauce that is poured over the top. I did NOT do that as I was sticking to the original recipe. I SHOULD HAVE done that! It was too thick and started to burn on the bottom, so I had to add water to the bottom of the pan. I won't make this again.

Guacamole
Made this today just as written. I found it too salty. Next time I ill use half the amount and then adjust according to taste.
