Downeast Maine Pumpkin Bread
I have made this a few times now. It is wonderful. I only use 2 cups of sugar. My kids are teens and I find that sometimes their friends are hesitant to try it; they don't know if they like pumpkin! Turns out they do! I usually make two dozen muffins and a small loaf of bread or 1 dozen muffins and a medium loaf of bread. I add regular sized chocolate chips to half the batter. I would say the chocolate chip muffins are preferred.

Cheesy Amish Breakfast Casserole
Made this for our church's Easter Breakfast. I thawed the hash browns, browned the bacon and chopped the onions the night before and stored them in the fridge. I put the rest together the next morning and I baked it closer to one hour. It went over very well and my family wished for left overs. There weren't any. Thanks for the recipe parothstein!

Hash Brown Quiche
The family really liked this recipe base. I used ground beef and also added some cottage cheese. I used 4 eggs and didn't add the milk. I baked it in my bean pot for about an hour.
