German Chocolate Cake III

This is my go to German chocolate cake. Very tasty and not too difficult to make especially for a newbie. It's good as written but with minor changes, it's fantastic! I bring everything to room temperature, increase the chocolate in the cake by 2 ounces, add half a package of French vanilla pudding to the evaporated milk mix, and toast half the coconut. With these changes, I have converted more than one G.C.C. hater! :)

Creamy Chocolate Frosting

Awesome chocolate frosting recipe. I use this to frost almost everything :) I make a few minor changes to suit my preferences, but even without changing anything my sister says this is finger licking good :)

Carrot Cake III

Made this recipe as written and it was very well received. The person I made it for said it needed a little bit more cinnamon but she must have liked it because she told another lady how wonderful my cake was :) I made it a second time with more cinnamon and added a little nutmeg and ginger and it made it more flavorful. I frosted it with a white chocolate cream cheese frosting (Yum!). I will definitely make this again.

Grandma's Gingersnap Cookies

This is a very flavorful cookie but it is not a snap. The center was chewy; I was looking for a cookie with a crunch. The person who I made them for thought they were delicious, but she was expecting a crunch too. BTW, I made it as written.

J.P.'s Big Daddy Biscuits

Great biscuits! I made 3 batches. The first batch was very good and it was made as written. The second batch came out fantastic! I replaced the milk with buttermilk, the shortening with butter, and the TBS of baking powder with 2 teaspoons of baking powder and 1/2 teaspoon of baking soda. I sifted all the dry ingredients and placed them in my food processor. I added the butter (I cut them up into little pats) and processed for a minute until they resembled coarse crumbs. I then slowly added the milk until it was starting to form a ball and then dumped it on to my flour covered counter. Yummy! These were so good and will be my biscuit recipe from now on :)

Rolled Fondant

I have never made fondant before but this stuff was perfect! The only change I made was to use corn syrup in place of glucose syrup because I didn't have any. Everything else was the same. I mixed it initially with my KA hand mixer and finished up using a wooden spoon. Kneaded it for a while adding powdered sugar as I went along. It was easy to roll and it tasted much better than the store bought kind. I will definitely use this again!

Seven Layer Dip I

Savory Pork Roast

Yum. My family loved this. I made it exactly as written, well almost. I did mix the spices in some evoo before rubbing it on the pork loin. I cooked it to 158 and it was "cooked perfectly" according to my husband.

The Best Mashed Potatoes

The potatoes were great! My dh even went back for seconds! I didn't have fresh chives so I used dried and they still tasted great. Also, I didn't use 2 cups of Parmesan cheese, more like 1/2 cup. Definitely will make again!

Allspice Cream Cheese Frosting

Used 8 oz of cream cheese and also added 1 tsp of cinnamon extract...only used 3 cups of sugar and it was plenty sweet. This frosting is really yummy :) My sister said the frosting really brought out the spicy-ness of the spiced cupcakes!

Brownie Frosting

Yum, yum, yum! I followed the directions/ingredients exactly...okay not exactly...I did boil a little longer than 30 seconds. I used milk/semi sweet chips because it didn't specify a specific kind. Absolutely fantastic!! I couldn't keep my fingers out of the pan. I used it on the Quick and Easy Brownies (from this site)

Quick and Easy Brownies

So good...followed others advice and only used 1 cup of flour...came out fudgy. They looked dry but when you bit into them, they were anything but. I actually tripled the recipe and put walnuts in one batch and then frosted two pans (one with walnuts and one without) using the Brownie Frosting on this site (also very very good). Ended up with 3 pans...two with frosting and one without. All three batches disappeared in minutes! This recipe is a keeper!

Donut Muffins

I made these as written except added about a half a teaspoon of french vanilla extract and wow are these good! I didn't grease my pans enough and they all stuck to the bottom of the pan, but I managed to scrape out 5 of them before I made myself stop! I didn't even dip them in the butter or sugar mixture :) I will definitely be making these again and again.

Pasta with Peas and Sausage

Had some sweet Italian sausage and wanted to try something different. I didn't have any heavy cream so I used 1.5 cups of milk and 2 tablespoons of flour...sauce was creamy and thick. My 5 year old ate all of her food and said it was very good. Would have given it 5 stars if she would have asked for seconds. Needed a bit more seasoning IMO. Will make again.

Pumpkin Cake III

Ok, so I am giving this 5 stars even though I made changes because the only change I made was to change the oil to 3/4 cup applesauce and 1/2 cup canola oil...I could not make a cake with the original amount of oil. I also added a package of pumpkin spice pudding to the flour mixture because I like pudding in my cake mixes. This cake is great! Very moist and flavorful. I didn't have enough pumpkin (1 3/4 cups) but it still came out great. I made a bundt cake and frosted it with a pumpkin cream cheese glaze and then dusted it with pumpkin pie spice! Yummy! Made cupcakes with the leftover and my picky niece ate two cupcakes without frosting!

Spicy Sausage Skillet Breakfast

Very good :) Made it exactly as written except added frozen corn (about 1/2 cup) and 1 can of black beans to make it a complete meal. My daughter (who's 5) cleaned her plate and declared it "great!"

Strawberry Cake from Scratch

I'm giving this recipe 5 stars even though I didn't follow it to a "t" because it was delish! The only change I made was to puree fresh strawberries (no sugar) and to separate the eggs...egg yolks added one at a time and then beat the whites and added them at the end. No complaints and no cake left over and I made it for a 2-layer large (12X18) sheet cake! Used cream cheese frosting in between two layers and frosted with a butter cream frosting. Very good!
