Mexican Bean Stew

Reviewed: Feb. 23, 2009
three stars because i didnt follow the recipe exactly. basically i was tired and didnt feel like making a huge mess in the kitchen. i used canned beans rinsed well, a can of hominy instead of regular corn, mexican style stewed tomatoes, chicken broth, chili powder (i did use a tiny bit of cinnamon and the cumin), preminced garlic and a ton of minced onion and onion powder. also after simmering for 20+ mins i added a tblspn corn starch in a small amount of water and let it simmer for another 10 mins. before spooning into bowls i crunched up corn tostada shells (i was out of chips) then put in the soup, and put shredded cheese on top. i didnt care for the garbanzo beans but that was because they hadnt soaked up the flavors yet. it was a good basic for a recipe that was quick and filling and somewhat healthy. i will definately make it again!

Easy Slow Cooker French Dip

Reviewed: Dec. 18, 2008
this was good, but it couldve been better. i used guiness, and you could slightly taste the beer, but still good. will probably make it again for a busy cold day when i know i wont want to come home and have to cook, but its not like my signature favorite dish.

Busy Night Turkey Taco Soup with Avocado Cream

Reviewed: Dec. 18, 2008
this was okay. i made it with my leftover "charlies slow cooker mexican meat" (i leave out the bottle of hot sauce from that recipe cause i have little ones but it still comes out FABULOUS). it was awesome the first night but by the next day it was totally flat of all flavor. not sure what i did wrong. if it was my meat then the recipe wouldve been flavorless right when i made it so im not sure why it rocked when it was fresh but tanked the next day.

Bow-Tie Pasta With Red Pepper Sauce

Reviewed: Dec. 18, 2008
i followed the recipe to the letter. it was basically just red bell pepper flavor. my whole family helped me search through the pantry for either something to add to this to make it better or something else to eat entirely. you would have to be a straight vegetarian to enjoy this, not just someone looking for something a little different.

Peanut Butter KELLOGG'S® RICE KRISPIES TREATS®

Reviewed: Dec. 18, 2008
i have been making these in different variations for a long time. they are so good!!! just a little alternative to the regular treats. also my mother used to use cheerios instead of rice krispies with peanut butter and a handful of peanuts, it makes a heartier treat and is really awesome!

Vini's Pork Roast

Reviewed: Nov. 20, 2008
i bought a pork shoulder butt roast (yeah i know that sounds like an oxymoron or whatever) at the grocery store and was just looking for some simple seasoning recipe that i could do quickly with stuff i had. i looked at this and 'herb roasted pork loin and potatoes'. i put the sage in a bowl and smelled it and it just smelled like thanksgiving stuffing, so i added onion powder, garlic powder, sea salt and fresh ground black pepper until the seasonings smelled good, then i rubbed it all over the meat and cooked it at 350 for 30 mins per pound. when it was done i immediatly wrapped it tightly in foil and placed it on a dish in the microwave while i finished everything else. *****the tip i have for the gravy is to mix the water and cornstarch in a salad dressing shaker then add to the drippings, that way your gravy has no lumps!!!***** i served this with homemade mashed potatoes and sliced up apples into a frying pan with some butter, brown sugar and lemon juice (i read that on the other recipes suggestions) oh with some dinner rolls and a salad this was one of the best meals ever! i will use a pork tenderloin next time but oh my god! this is now a family favorite!!!

Stuffed Peppers

Reviewed: Nov. 2, 2008
hmmm... well this was okay as is. i made it a second time and since my family tends to choose maxican flavored foods i changed it for us and we liked it better. i cooked my rice then added it to the meat with some carne asada seasoning and garlic and onion powder. instead of plain tomato sauce (the first time we felt it was overpowering) i used mexican style stewed tomatoes that i pureed. i only put a little on top so it wouldnt overpower the meat and seasonings. it was good our way, but we didnt care for it the first time.

The Best Rolled Sugar Cookies

Reviewed: Nov. 2, 2008
this recipe is so good and easy! the cookie dough is actually my favorite part! make sure to put it in the fridge overnight or make it early in the morning and dont plan to roll it out until evening. the butter is soft when you mix the ingredients and it needs to harden up enough to be rolled out without sticking to everything, especially if you want to use the parchment paper method (which is a wonderful for clean up etc) also do not leave these in too long!! they harden as they cool off so if the bottoms are the tiniest bit golden then theyre done!

Marinated Baked Pork Chops

Reviewed: Nov. 2, 2008
wanted something different to go on pork chops. i tried this and everyone else loved it, but i just thought it was okay. i guess the best way to explain how i felt about it was that i forgot i had even made this until i saw the name of it in my recipe box. not highly memorable for me.

German Apple Cake I

Reviewed: Oct. 10, 2008
i give it a 4. it comes out amazing BUT another reviewer was right when they said the next day it comes out a mushy mess. well not exactly a mushy mess, but over a couple of days it get soggy, like it wasnt cooked through. maybe reduce the oil and up the cooking time. i kept checking mine, and i made it in my grandmothers ages old springform silver pan with ridges on the bottom, so you would have thought it wouldnt have taken longer to cook with the hole in the middle. anyway it was WONDERFUL FOR THE FIRST 24 HOURS!!!

Home-Style Scalloped Potatoes

Reviewed: Oct. 10, 2008
this tastes just like the scalloped potatoes my mom used to make! the only thing i did differently was that i used 1/2 c. chopped onion, just because i chopped a little extra, and then i added maybe 1/2 tblspn minced onion to the cream mixture and sprinkled the first layer of potatoes with a little minced onion also. it didnt come out to onion-y even though it would sound like it would. just make sure that the milk creams up a little before you pour it over your potatoes otherwise it will come out too watery. think of it as making a cream gravy like you would for breakfast- thats all it really is, except it has onion.

Roasted Pears with Caramel Sauce

Reviewed: Oct. 10, 2008
okay this has always been an excellent easy dessert in the past however- tonight i totally messed it up! in the past i used butter, cut the pears in slices, and used an 8x8 pan, ignoring the directions for a single layer. tonight after i made an amazing dinner, i totally thought i was gonna top it all off with this dessert. but my husband had accidentally bought margarine so i went ahead and used it. also i put the pears in one layer in a larger pan. for some reason it came out all wrong, with this weird flavor... i think ill stick to butter and the little pan next time, it turned out perfect then.

World's Best Peanut Butter Fudge

Reviewed: Oct. 3, 2008
five stars- this is amazing!!! so soft and smooth! not dried and crumbly like other pb fudge recipes! the only catch is that you have to let it sit for about a day to let it 'set' so the peices dont stick to each other, etc. if you do that its heaven!!!

Charley's Slow Cooker Mexican Style Meat

Reviewed: Oct. 3, 2008
i have now used this recipe at least ten times and this is the best mexican meat ever! my dad, who never says anything complimentary about anyones cooking, said it was better than the best mexican food restaurant in town! i almost fell out of my chair when he said that! i only leave out the bottle of hot sauce cause i have 2 little ones and i cant set them on fire ;) anyway this recipe is wonderful, i make it and we eat and the left overs we separate and freeze. you can actually use a larger roast than even called for there is enough chiles and onion to balance it out, and i dont really measure my spices so im sure i dump in more dry spices than called for but it is soooo good!
