Gourmet Sweet Potato Classic

This was so yummy. Made some changes: Replaced the heavy cream w/ skim milk, decreased the butter to about half and omitted the pecans. Still tasted sinfully delicious. This is a keeper.

Chicken Pot Pie VI

This is a great simple recipe. I made some changes. Left out the cheese and mushrooms completely. Added 1/4 tsp of thyme, basil and oregano and minced onions. Used frozen vegetables, 1 can of low sodium, fat free cream celery, 1 can of low sodium, fat free cream of chicken, and frozen puff pastry from Trader Joe's to save time. Turned out yummy. Husband requests this frequently.

Ground Beef Vegetable Soup

I was searching for ground beef recipes and tried this one. Our family loved it. Instead of using canned veggies, I used frozen or fresh. Much higher in nutritional value. I reduced the ground beef to 1 lb and used grass fed pastured local ground sirloin. It was plenty of beef. This is a keeper. Thanks for the recipe.

Thai Pineapple Chicken Curry

Tastes just like at restaurants. I've tried several other thai chicken dishes and this is the best & simplest. I only used 1 can of coconut milk and omitted the pineapple. I used a bag of tri-colored frozen bell peppers from Trader Joe's and a can of bamboo shoots. It was excellent.

Baked Ziti III

Mixed 16oz tub of lite sour cream w/ the penne pasta, used ground turkey sauteed w/ onions & garlic. The best ziti recipe ever. The pasta turned out very creamy and yummy!

Banana Banana Bread

This was excellent, very moist. I used 4 overly ripe bananas, 1 cup of whole wheat flour, 1 cup of all purpose flour, 1 tsp of vanilla, 2 tsp cinnamon, 1/2 tsp of nutmeg. Very moist. Next time, I'll substitute the 2 eggs w/ just egg whites to make it healthier. The recipe yieled 3 mini loaves baked for 1 hour at 350F.

Korean BBQ Beef (Pul-Kogi)

I'm Korean-American and have had Bul-Go-Gi countless times. This is the best recipe, trully authentic as others have stated. Recipes I've tried from Korean cookbooks did not turned out as well as this one did. This is definately a keeper.

No Sugar Apple Pie

Sweet Corn Bread

I used fat free sour cream and skim milk. Most corn bread recipes I've tried have been too dry and not sweet enough, but this was moist with a touch of sweetness. I would probably add more sugar as others have noted next time.

Garlic Pasta with Prawns

This was simple and fast, but as others as noted, it needs a little somethin' somethin'. I added red pepper flakes which improved it. The garlic taste was hardly noticeable, so I'd suggest adding a couple of more cloves.

Thai Ground Chicken Basil

I had high hopes for this recipe from all the positive reviews on site. My husband and I LOVE Thai Basil Chicken and have ordered it many times at Thai restaurants. This was ok, but definitely did not taste like it came from a restaurant as some have stated. I will continue my recipe search and would probably not make this recipe again.

Penne Pasta with Cannellini Beans and Escarole

I substituted the escarole for spinach since the store was out of it. Otherwise, I followed the recipe. It was simple & quick, but the taste was too bland. My husband who eats just about anything didn't like it. I wanted to really like this recipe, but probably won't make it again.

Mongolian Beef and Spring Onions

followed other reviews and cut sugar to 2TBS, but it was wayyyyy too salty. Need to cut soy sauce by half at least. Does not taste anything like the Mongolian Beef that I've eaten at restaurants. Just tastes like fried beef drenched in soy sauce. Would not make again.

Chicken Stir-Fry

WAY tooooo salty if using the 2/3 cup soy sauce that recipe calls for. I used 1/4 cup of reduced sodium soy sauce to marinate 2 chicken breasts and that was plenty. Everything else I kept the same. The dish turned out decent.

Caramelized Baked Chicken

I followed the directions of the most helpful review for boneless skinless breast. Results were not good. The sauce did thicken in the pan, but in the oven, it got all watery again. The taste was weird too. Totally did not like at all. Would never make again. Feel like wasted meat.
