i am a family man with a blue collar job an awesome wife and 2 boys and great friends and family. i love cooking for all my peoples and they love coming over for the grub and fellowship! i owe my interest in cooking to my mother who has been making delicious home cooking for since the 60's. although she has "passed the torch" on some of the family recipes, i have branched out and invented many new dishes and have really kicked the golden oldies up a few notches! i love meat and my wife is vegetarian so i have to be creative AND frugal.
My favorite things to cook
pastas, seafood, casseroles, wild game, italian, asain (but trying to explore more), and we all LOVE MEXICAN!!!!
My favorite family cooking traditions
when we would ask my mom, as kids, "what did you do to this to make it taste so good?" and she would always say, "i spit in it!" but we all know now that she meant because it was made with her love and experience
My cooking triumphs
my fried fish and chips. everyone always tells me its the best theyve ever had, but hey, what else would you expect from an irishman? and then everyone has another pint! also my chili is freggin awesome
My cooking tragedies
trying to make pepperoni rolls, they freakin oozed all over my oven (was my wifes idea though)

Springtime Spaghetti
VERY GOOD BUT NEEDS MORE! i doubled the recipe for a main course and what i did (since i think BIG zuch's are nasty) is i used 2 small green and 2 small yellows, also added a choped onion, a julienned red bell pepper and stalk of broccoli cut into pieces. also i added a little italian seasoning to keep the dill in check but still noticeable. AND FOR THE KICKER- i pan seared some already cooked, deveined and shelled frozen shrimp in some butter and a dash of white wine to top the dish, let me know what you think if anyone tries it this way :) SLAINTE!

Mexican Rice III
me and my family love this thanks for the post! i added some green chilies and a hungarian hot wax or banana pepper or whatever i have, but very very good!
