Delicious Ham and Potato Soup

I would have given it 5 stars, but I thought it was too salty. Next time I'll omit the salt (the ham is plenty salty). Otherwise, I loved it.

Vietnamese Chicken Salad

This was delicious, although I made a few changes to make it healthier. I used only half the peanuts and left out the vegetable oil (replacing it with water). I also used oyster sauce because I couldn't find fish sauce in the grocery store.

Perfect Pumpkin Pie

Took this to Thanksgiving dinner and was told that it was the best pumpkin pie they'd ever tasted. I substituted fresh pumpkin puree for the canned pumpkin.

Pumpkin Pecan White Chocolate Cookies

I was looking for a recipe to use up some leftover fresh pumpkin, so I tried this one. I even messed up and added too much pumpkin, then tried to correct by dumping some extra flour and sugar. Somehow, these came out great! I did have to increase the cooking time to 30-35 minutes.

Roasted Brussels Sprouts

Delicious! It took an hour of cooking to get them to be even a little brown, so I'm not sure why other reviewers thought 30-45 minutes was too long. I guess you just have to keep an eye on them and figure out the correct amount of time for your oven. Perhaps mine had trouble browning because I par-boiled them for several minutes first, as another reviewer recommended for getting rid of the bitter taste. Next time, I will not par-boil.

Tomatoes With Vinaigrette

Delicious and easy! I only used 1 Tbl of olive oil instead of 3 Tbl of vegetable oil and used red wine vinegar. Also, left out the sugar, but I'm sure it would have been good with it in there. Definitely one I'll be making a lot with the tomato crop coming in.

Lemon Garlic Tilapia

I don't give out 5 stars very often, but this was delicious and so easy! I didn't have fresh lemons, so used reconstituted lemon juice (but can't wait to try it with fresh lemon juice). Also, used garlic salt with parsley in it instead of the garlic powder and parsley.

Cajun Chicken

I usually use half the oil and just brush it on the chicken. This also tastes delicious using Greek seasoning instead of the Cajun seasoning. Good on pork, too.

I liked the simplicity and healthfulness of this recipe, but found it slightly bland. It is a good starting point. This time I added chicken and black olives; next time I'll try adding artichoke hearts, sun-dried tomatoes, and pine nuts.

Chili Chicken Stew

This was very good! I made a few changes...I didn't have any thawed chicken on hand, so I used canned chicken (which actually tasted fine) and I also added some lentils to increase the fiber (which I don't think I'll do again). I added some jalapeno slices (from jar) to the top (which was excellent).

Spinach Lentil Soup

This soup is unbelievably good! Especially considering how healthy it is. I'm doing Weight Watchers and this recipe is virtually 0 points because of its high fiber content.
