Downeast Maine Pumpkin Bread

Strawberry Cinnamon Oatmeal Muffins

Made these today for Easter brunch on Sunday. Not thrilled with the way they turned out. Not very flavorful. I substituted 1/2 cup strawberry yogurt for the olive oil, used 1/4 cup brown sugar and 1/4 white sugar. Also used 1/2 cup white and 1/2 cup wheat flour. I will still serve these at my brunch but most likely wont make them again.

Meatloaf with Fried Onions and Ranch Seasoning

Delicious! I just made this tonight for my two teenage daughters - one of whom is a meatloaf hater. They loved it! In fact, the one who "hates meatloaf" had a second helping!! I used 2 lbs of ground beef (98/2). I also used the entire pkg of ranch dressing mix. I was worried that the big can of french onions was a mis-print, but it turned out fine. This will definitely replace my old stand-by meatloaf recipe!

Flourless Chocolate Cake II

I just made this last night for a friend at work who has celiacs disease. It was very easy to make - I followed the recipe exactly except that I used semisweet choc chips instead of squares. I baked it for 30 min. When I checked it - it appeared not done, so I left it in for another 5 min.. When I removed it from the oven it looked beautiful - however, upon cooling the entire thing sank to about 1/2 inch!! I still served it here at work today and while it tasted great (very rich, sweet) - it was more like fudge than a cake. I must have done something wrong - has anyone else had this happen? The recipe says to bake at 300 - maybe it should be a higher heat?? I'd like to make this again but would like it to stay risen!

Too Much Chocolate Cake

Made exactly per the recipe. Absolutely awesome - and I am a chocoholic. Frosted with the Chocolate Ganache recipe on this site made with Ghirardelli 60% bittersweet chips - which I think added the perfect addition of not too sweet frosting. Sprinkled with mini choc chips and toffee bits. Will definitely make again.

Chocolate Ganache

I made this to go with the Too Much Chocolate bundt cake on this site. I used the Ghiradelli 60% bittersweet chips (full bag) as another user suggested but didn't add the rum. Was AWESOME and it did not need butter to make it shiny. Next time I will halve the recipe as that was enough to cover the entire cake.

Crispy Rice Cereal Balls

I added twice the amount of rice krispies than the recipe called for. These are good, but only when frozen. Could not leave on a cookie plate because when they are room temperature they are a gooey mess! I'm not sure what to change but i will try again next year!

Beth's Spicy Oatmeal Raisin Cookies

I just made these cookies for my daughter's graduation party next week. I made the recipe with margarine instead of butter to increase the fluffiness of the cookie. I baked one dozen as a test and they did spread alot and were very thin. I then added an additional 1/2 cup of flour to the batter. The rest of the batch was perfect - thick, chewy cookies! PS-I also increased the cinnamon to 1 1/2 tsp and added 1 tsp of baking powder. Next time I will decrease the salt to 1/4 tsp.

Best Chocolate Chip Cookies

o.k - but not the best. Made 2 batches, adding 1/2 tsp cream of tartar to each batch. First batch was flat. Second was thicker and chewier the way we like. No idea what the difference was but next time I will substitute butter flavored Crisco for the butter and hopefully they will stay thick and chewy.

Banana Pudding IV

Awesome! I am a complete chocoholic but this may have become my new favorite dessert! Took to a New Years Eve party and everyone loved it!!! I doubled the recipe, used 3 of the smaller boxes of french vanilla pudding mix, and only used 1 8oz container cool whip. I layered the wafers, bananas and pudding mix in a trifle bowl -3 to 4 layers, ending with the pudding. Topped each serving with more cool whip. I could only fit about 3/4 in the trifle bowl, kept the remaining pudding mix at home to enjoy later (without the wafers or bananas - add those later as you serve it or bananas will go bad). You have to try this!
