Mussels in Curry Cream Sauce

These were SOOOOO good! I first tried it with half and half but it curdled! Then I got real and used the cream and it was beautiful. I may have poured too much wine because it turned out a bit thinner than I anticipated...but FULL of flavor!! We will definitely use this recipe again!

Easy Fruit Cobbler vegan style

OH.MY.GOD! This was soooo good and so easy! I made this last night for our day-before mothers-day lobster feed and everyone raved about it!! I used spelt flour, raw sugar and soy milk and it turned out fantastic! I had planned on making it with peaches but I hadnt bought enough so I tossed in some strawberries and blueberries, served it with vanilla ice cream and WOW! I will make this again and again and again.....thanks!

Quinoa with Chickpeas and Tomatoes

This was my first time making Quinoa and this recipe was perfect! I followed it all except I forgot the chickpeas. It was fantastic and so good for you! The Cumin made it.

Rum and Chocolate Cheesecake

This turned out better than I expected! I did not find it too tofu-tasting at all and it was nice and dense. I didnt really taste the rum either...I topped it with bananas and that added nice flavor. I think if I make it again I might mash some banana and put it in the batter itself.

Spicy Black Bean Cakes

These were GREAT! The sour cream sauce really made the dish...dont skip it. I didnt have any jalapeno peppers so I used hot red chillis and it turned out beautifully. I will make these again, for sure.

Healthy Banana Cookies

I made these this afternoon. They turned out alright. I used apples instead of dates, apple sauce instead of oil and after my first batch came out of the oven I decided they needed some more sweetness. I added some raw sugar to the rest of the mix. I also added some cinnamon and a dash of nutmeg. They were a lot better after the alterations!

Vegan Brownies

This was my first time baking vegan and it turned out alright. I made some changes though...I used whole wheat flour instead of white, raw sugar instead of white sugar and I used organic apple sauce instead of the oil. A crusty layer formed on the top of the brownies that tastes kind of bland but the inside is as moist and tasty as can be! They're not as good as regular brownies but thats to be expected! These are a pretty good alternative and really, quite simple to make :)

Banana Cheesecake with Caramel Sauce

I made this for a family gathering of 10 people. I thought the banana flavor may be compromised by the caramel so I just used Whipped cream. Tasted like HEAVEN! Next time I have a large group over I will make it again for sure! simply lovely.
