I dont know about you but, when my family gets together it can get a bit hectic!
Sometimes Im happy to be the one cooking because it means I can sneak into the kitchen whenever I need a breather...
The only time we are all quiet at once it when our mouths are full of good food!
So since I am a part of the only couple without kids (yet) we had everyone over for Fathers Day.
So I set up the deck, and made sure the house was presentable.
It was a beautiful day so I planned to use the BBQ.
I stumbled upon this great Vegan cooking site called veganyumyum.com and I have been stalking it ever since! I am not a vegan but some of these recipes look phenomenal! The self-made chef (Lauren Ulm) is an absolute genius!
I seemed to have accumulated an abundance of asparigus so I wanted to do something with it before it went bad. I found this great looking recipe called
Tart with White Bean Pesto"
She uses vegan puff pastry (which I couldt find so I used the stuff with butter) and she makes this beautiful looking paste with cashews and navy beans...sounds funny I know but she also tosses some pesto in and it changes everything!
SO I followed the recipe and it looked fantastic!
tasted good...but not the best thing I have ever made... In hindsight, I think I should have added some cheese and it would have given it that extra something it needed. Next time :)
And there WILL be a next time!
another thing I made (improvisation) was grilled veggie sandwiches with garlic/basil mayo on seven grain ciabatta bread.
sandwiches turned out wonderfully...I mixed up some mayo with some chopped garlic and chopped fresh basil and kept it in the fridge for the night to allow all the flavors to blend.
morning of the dinner I oiled up some red peppers, sliced eggplant, marinated portobello mushrooms and fennel.
wasnt sure how far in advance I could make the sandwiches. I was afraid that the mayo may make the bread soggy. I decided to make them about 15 minutes before the family arrived.
had some of the navy bean/cashew/pesto mixture left over from the asparigus dish so I also planned to use this for the sandwiches.
