Honey Dijon Pork Chops

Simple. Tasty. Family really liked it, so will add to rotation for pork. I used brown mustard. I also used thin chops so that cut the cook time by half.

Hot Tamale Pie

My whole family put this in their top five rotation dinners. Changes I made: cornbread from scratch, homemade taco seasoning instead of chipotle powder and salt...just because I didn't have it. Also omitted poblano for the same reason. Super yummo!!

Aunt Norma's Rhubarb Muffins

To die for! I took other reviewers suggestions and made it 2 full cups of finely chopped rhubarb (used my hand chopper) and omitted the walnuts (which I usually adore). The rhubarb definitely took center stage. I'm going to have a hard time using my rhubarb for anything else! Thanks so much for the recipe!

Pumpkin Waffles with Apple Cider Syrup

LOVED THESE! I actually made the first batch gluten free using an all purpose mix recipe in place of the AP flour, but I'm dying to try it "regular" for myself since the GF version was even good! The Apple Cider Syrup was to die for! Thanks for the recipe!

Italian BBQ Pork Chops

Well, I really liked it. The family, not so much. The kids wouldn't touch it and my husband who drinks vinegar straight from the bottle has now declared that he doesn't like warm vinegar, but liked "whatever other tastes there were in it". So, I think the fix is, that I'll have to reduce the vinegar...maybe by half. I used it as a marinade for about an hour and then broiled the chops (5 min per side). While they were broiling I brought the leftover marinade to a boil and then when I flipped the chops I poured it on top of them. This made them very saucy which I loved because that's where all of the flavor was, but too much for the rest of them! Oh well.

Smoky Grilled Pork Chops

Followed the recipe exactly. It was just ok. The kids said it was too strong and my husband said it was too salty. All in all I think the flavor was ok, but it was just too strong. Less of a flavor enhancer and more of the main event.

Zucchini Pasta II

The family liked this as a change up to the normal spaghetti pasta night. I followed one other reviewers suggestion and used some vermouth. Basically I doubled the sauce portion of the recipe and used a cup of broth and a half a cup of vermouth. I didn't have fresh basil so I used dried in with the sauce at the same time as the oregano. Also I used green beans instead of zucchini just because that was what I was in the mood for veggie-wise. I'm glad I doubled the sauce or I don't think there would have been enough sauce for four people's pasta. Next time I'll go heavier on the salt & pepper. Oh, and I omitted the red pepper because it is just too hot for us. Also, as one other reviewer said shredded Parmesan on top really did make it, so don't skip it!

Black Beans and Pork Chops

Wow! I was so scared that this would turn out bland and it didn't! It probably matters the kind of salsa you use and I had the good stuff on hand. My skillet is big so I used 3T of Olive Oil, then I was scared it would be oily, but it wasn't. Also, I only had dried cilantro...it probably would have been zestier with fresh...next time! But it was so good this time, I can't wait to try fresh! OH, I did salt the pork chops as well as pepper and could taste it in the final product and was glad I did...I would definitely recommend it.

Creamy Rice Pudding

Overcooked some white rice. Didn't want to waste it. Made this on the off chance that it would rectify the situation, took it to a BBQ. Everyone loved it! Gotta love when you can save a mess up!

Fried Green Beans

Went looking for a recipe for these after having them at Applebee's (they are SOOOOO good!) They didn't quite turn out as good, a little more soggy. I was told that the oil wasn't hot enough. I did it in a pot as I don't have a deep fryer. It started out hot enough, but if you keep adding and don't let it heat back up it apparently cools down, so watch your oil temp!

Chewy No Bake Granola Bars

My family gobbled these up. Definitely quick and easy...although, the honey flavor was strong! I think I'll cut that and maybe the vanilla both in half next time. Hopefully they will still hold together. OH, and they have to STAY in the fridge or they turn into just really sticky granola! :-D

5 Minute Cookies

Quick and gluten free (if you use gluten free oats)! My family loved these. I followed the recipe to the T, although next time I think I'll cut the sugar in half and maybe increase the coconut by a half cup for a personal adjustment of flavor. These looked way runny and I was concerned as others were, I doubt they would have made balls, but I used my dough scooper to put them onto a waxed sheet and didn't mash them down. Then I stuck half of them in the freezer because we wanted them sooner rather than later and half of them in the fridge. Both set very nicely...so even though they look runny, persevere...it's like buttercream frosting, you have to have a little faith. Thanks for the quick and easy recipe...it satisfied my coconut & chocolate craving and quickly!

Bread and Celery Stuffing

I finally settled on this stuffing recipe...it was SO hard to choose! I didn't want to "over do" the flavors and so many others seemed to have too much going on. I made it as stated and then it was so easy that I got brave. I ended up adding one chopped up Granny Smith apple (next time I'll add two), pecans (lots) and a pound of the Jimmy Dean sage sausage. I used four baguette loaves of french bread, I used baguettes because I like the flavor that the crust provides and then I also threw in about half a loaf of homemade 1/2 whole wheat bread (although I didn't even notice it in the final product). This was beyond delicious! My husband who is a Stovetop worshiper (we've only been married 3 months...don't worry, I'll convert him!) and he said that it was truly the best stuffing ever. He said that the "extras" weren't extra at all and that they made the dish. Here I was thinking that I would shock his simple bacheloresque taste buds and he actually liked all of the flavors. Hooray! Thanks for the base recipe, it's a great kick off to add extras that you know that your family likes!
