Coconut Lentil Soup

Awesome!!! Hard to beleive something so healthy, gluten and dairy free can be soooooooo good! AND easy to make. Will become a regular in my house for sure! I used a whole tin of coconut milk instead of the other liquids (left the water for the lentils the same) and doubled all the seasonings including the ginger. MMMM mmmm.

It was sooooo good! I used some different veggies, basically what I had on hand. I didn't add any cream or milk but used almond milk instead and it worked out fine.

Rosemary Chicken with Orange-Maple Glaze

This was sooooo yummy and smelled so good. I will definitely be making it again. I didn't have the wine so I skipped that, the sausce never thickened (not sure if missing the wine had anything to do with it) But even with the sauce liquidy it was awesome or as my son would say EPIC!

Roasted Herb Chicken and Potatoes

Absolutely great and easy. I used white wine vineger seasoned with tarragon because I had no red wine vineger in the house. I accidentally poured all of the sauce on the chicken instead of basting it with it and it came out perfect. The potatoes were perfect too. Thanks!

Spiced Beef Stew

PERFECT! I used fresh cut up veggies and left out the butter, used olive oil instead. It was sooooo yummy. Unfortunately I used the only beer in the house "Fin du Monde" a Quebec micro-brewery I think. The beer by itself is one of the best I've ever tasted and my husband was a little miffed that I used the good one to cook with, hee hee. I'd like to make it again with a cheaper beer and see if there is much of a difference.

Chicken Stew with Pepper and Pineapple

It was good but no-one raced to get the leftovers. The chicken was a bit dry, I think that skipping the pre-browning may be the better way to go.

Black Beans and Rice

This was soooooo easy to make! I added a few drained serving spoons of stewed diced tomatoes and used chicken broth. Everyone EVEN THE UBER PICKY KIDS LIKED IT! Definitely a keeper. Thanks so much!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This recipe was lovely. i didn't have any apples so I added unsweetened apple sauce instead. It came out a bit too sweet for me so next time I'll add more lentils and less sweet potato. I used olive oil instead of butter.
