Gingerbread Men

This is a great recipe, especially for kids who don't like the "spiciness" of a traditional gingerbread man. I followed the recipe exactly, but listened to the other reviewers, who said to decrease the baking time. I'm glad I did! I baked the first batch for just under 10 minutes, then decreased the time for subsequent batches. They turned out really well. I'll definitely use this recipe again. Thanks for posting it!

Quinoa Pudding

Yummy quinoa. A few changes: I used fat-free half-and-half in place of whole milk, substituted orange juice for 2 of the cups of water, added shredded coconut and raisins and used a bit more butter. Since the butter was salted, I didn't add more salt. In place of refined white sugar, I used a drop of real maple syrup. Next time, I'll skip the maple syrup because the bananas and orange juice definitely made it sweet enough.

Easy OREO Truffles

I love these and so does everyone I know! If you want to save some fat grams, you can use low=fat cream cheese (neufchatel cheese) without sacrificing the flavor. When I'm pressed for time (or just feeling lazy), I skip the melted chocolate and lightly coat them in cocoa powder, instead. No one notices the difference!

Baked Stuffed Pumpkin

This was my first baked pumpkin and it turned out really well. I made a few changes: I: 1) skipped the brown sugar because I (correctly) thought the dried fruit would add enough sweetness, 2) used homemade cranberry sauce, which, again, is less sweet, 3) added some dried cranberries, 4) forgot to buy fresh ginger, so I added a few finely chopped pieces of crystallized ginger, instead. I had some extra mixture, so I added it to the "Awesome Sausage, Apple and Cranberry Stuffing" recipe.

Sangria! Sangria!

I used this recipe to make sangria for the first time. It was sooooooo good. As some reviewers suggested, I omitted the sugar and used ginger ale in place of the carbonated water. I also added apples, peaches and plums. I made a pretty big batch and am happy to say it disappeared. Yummy!
