Coronation Chicken

I thought it was a lovely combination of flavours, and the texture was on point as well. It is a very interesting alternative with the mango rather than the apricot. Will make again!

Blueberry Pancakes

I have come across this recipe before, from a healthy eating website about 3 years ago, and I have to say, it is the BEST pancake recipe I have ever used! We sometimes mix in about a teaspoon blueberry jam if we have it in the house, and tend to have to add about an extra 2 tablespoons of milk to thin them out most times. I also always sift the flour, don't know if it makes a difference, but I am not about to stop doing it, as they come out absolutely perfect everytime! My family raves when I even mention I am thinking of making them for breakfast!There are 6 of us in the house, and I do have to at least double the recipe. MMMMMMMM!

The Best Rolled Sugar Cookies

I made these for my son's 5th birthday party... and they were a hit! My husband complained that they were very bland, but once we put the icing on them, they tasted just perfect! We used a simple royal icing recipe, and then added icing sheets intended for cupcakes, each one with a guest's name on them, and the parents couldn't stop raving either! Will definitely make these again!

Thick Cut-Outs

Used these for a birthday party with just a basic Royal icing. Without the icing, they were just ok, but having said that, they were just right with it. Perfect really. And rolled out and baked up perfectly. I topped them with those printed cupcake toppers I purchased, and they had each child's name on them, perfect treat/place setting!

Kielbasa with Peppers and Potatoes

Delicious, easy and quick! Even my picky 2 year old loved it! Followed the recipe exactly, let things brown evenly, loved the almost crispy texture. YUM!

Quick and Almost-Professional Buttercream Icing

This was just right! I used to to frost a hedgehog cake that I topped with chocolate buttons, so I did add about 3 tablespoons of cocoa powder to make it chocolate (and I used almond extract in place of vanilla). I used the rest on some cupcakes because I wouldn't dare throw it away, it was that good!

Honey-Glazed Pork Chops

This was fantastic! And super easy, as I was running late with dinner. The drippings were a treat over the steamed rice I served this with, alongside sweet corn & green beans. My kids, who can be quite harsh critics, loved it.

Cocktail Meatballs

This is so simple to make, and tastes fantastic! It is very similar to a recipe that was my Mom's go-to recipe for potluck parties, but she used to use onion soup mix for the meatballs, which I can't find in England. This tastes almost the same, and it's so nice to have home comforts. I have made this today for a potluck party, too! I used a jar of tomato and chilli sauce in place of the chili sauce, though, as it's what I had on hand. Thank you for this recipe.

Chicken Supreme III

This was simple to throw together on a busy evening, and my kids LOVED it. I wasn't as keen on it, but then again, I think it's more to do with the fact that we only had Sage & Onion flavoured stuffing mix, and it was a bit overpowering. I added a small tin of sweet corn, because my boys love it,and it did turn out quite well. Will definitely be making this again!

I made these as the recipe reads, and found it a touch bland. My kids LOVED it though. The second time I made them, I did make some changes, and with changes, I'd rate it much higher. My changes weren't that drastic, just a chopped onion, some Adobo and 3 cloves minced garlic cooked with the beef. Also a chopped green pepper added with the rest of the ingredients. Also, seasoned with salt and pepper as the recipe reads, but added crushed 1/4 tsp cumin seeds, 1 tsp mild chili powder, 1 tsp paprika. Was deee-lish!
