French Silk Chocolate Pie I

I am not a novice baker/cook. I bake and cook everything in my home from scratch. I typically make a chocolate pudding-type pie and thought I would try something new. As-is, this recipe is mediocre at best. With the changes people have mentioned (whisk attachment, beat on high, double the filling), it is better, but mine is still a tad grainy from the sugar, and was no where near chocolatey enough, I added 2 TBS cocoa and wish I had added more. The main picture is especially deceptive, as the texture is no where near what is depicted. If you make the changes, you'll have a decent chocolate silk pie. As for me, I'm sticking with my dark chocolate pudding pie from now on.

Barbequed Ribs

This recipe is worth every star. I am not a sauce person, and I almost left it off. It would've been a huge mistake. I had people at the party ask for the sauce recipe. It's amazing. I cut the cayenne in half, because of spice-sensitive people I knew would be there.

Sweet Restaurant Slaw

perfect slaw. i made the following changes, but it was based on preference: used mayo, omitted the oil and poppy seeds, and used sweet onion instead of white. I grated the onion into it right before stirring the sauce with the coleslaw. everyone raved about this slaw, even those who don't typically like slaw!

Delicious Chicken Casserole

Yes, I changed this recipe, but it deserves 5 stars. My 18 month old ate 4 helpings and my uber-picky 8 year old actually asked me to make it again! We don't use condensed soups because of the MSG, so I made a roux-based chicken gravy using chicken stock (3 TBS butter, 3 TBS flour, brown then add 2 c good chicken stock). here are all of my changes: meat from a rotisserie chicken, 2 c brown rice, the homemade gravy, 6 oz sour cream, 3/4 tsp onion powder, 3/4 tsp garlic powder, 1/4 tsp salt, 1/8 tsp pepper. covered with cheese. I had bread crumbs to use up, so I melted 2 TBS butter, mixed it with 1 c bread crumbs and sprinkled that on top. I have made similar casseroles, but none with sour cream, and that's what makes this amazing. This will be a new staple in our house!

Minnesota's Favorite Cookie

I was so disappointed in this cookie. I am an experienced cookie baker. First, the bottom cooked way before the top. I semi-fixed this by lowering the oven temp to 340deg and cooked for 11 min, taking out when the top is still moist (I do this with all cookies). Second, there is not enough salt in this recipe. Assuming you use unsalted butter (which is the norm in recipes unless notated), 1/4 tsp is not enough. Granted, I left out the toffee bits, and that would add some saltiness, but still, I would up it to 1/2 tsp. They were just too bland. Third: texture. This was a fluffy cookie, no chewiness at all, which really disappointed me, since it is a 'brown sugar butter cookie'. I'm not sure how to fix that issue. Next time, I will make my tried and true favorite chocolate chip cookies with all brown sugar and have much better results than this one.

Cinnamon Syrup

I added 2 TBS butter and doubled the cinnamon. We will never buy maple syrup again. It's like licking the filling out of a cinnamon roll. The butter helps the consistency so it's not gloopy, like some people complained.

Chocolate Oat Snack Cake

This was a perfect birthday cake for my one-year old. A few changes: I used shortening (I was out of butter), upped the cocoa to 3 TBS, omitted the chocolate chips and the nuts. Instead I frosted it with chocolate frosting. Delicious, slightly chewy, moist cake. Loved it!

Best Bread Machine Bread

i followed the recipe with just one exception: i subbed melted shortening for the oil. the bread was heavy and way too yeasty (and i like yeasty bread). I made a different recipe in my breadmaker right after this one and it was great, so i know it's not my yeast, but this bread was definitely subpar.

Carrot Cookies I

these cookies were pretty good, but very bland. i did make a few changes, but none of them would have made them blander. i subbed 1/2 c of applesauce for the shortening, used canned carrots, and added 1/2 tsp cinnamon. the texture of this cookies was perfect! i think adding brown sugar, 1 tsp cinnamon and maybe choc. chips would make this recipe a keeper.

Chicken Enchiladas with Creamy Green Chile Sauce

This enchilada recipe stands out from the rest! The only changes I made were: I never dip the tortillas in oil. I don't have a problem with them falling apart, maybe because where I live they make them fresh. Also, I don't like raw onions, so I added the onions to the butter and cooked them until soft before adding the flour. Fabulous recipe!

Clone of a Cinnabon

i make these all the time, i roll them out as thin as possible, which makes them more tender, and more like cinnabon. i also put them in the fridge overnight, then removing them about 1 hour before putting them in the oven. perfect everytime!

My Amish Friend's Caramel Corn

The best caramel corn I've ever made. perfect combo of chewy and crunchy. I used butter, and cooked it at 200 deg for 45min, stirring every 15 min. I used less popcorn, because we like ours heavily coated (1 c unpopped kernels). It all fit in our large roasting pan.
