Roasted Vegetables

We use whatever veggies we have available in the house and leave out the thyme and rosemary but add salt, pepper, and garlic cloves in the mix. Yummy! Thanks.

Eggplant Parmesan

Mwah! Delicious! Love that the recipe does not contain bread crumbs! I slightly overcooked the eggplant but this was my first time with the recipe. I know it will only get better with practice. And I WILL be making this again! Thanks!

Chicken Asparagus Roll-Ups

Easy and delicious! I used thinly sliced chicken and layered it rather than rolling it. (Late night dinner and hungry people.) Served it with roasted vegetables and rice.

Chocolate Cavity Maker Cake

BOX CAKE! You've got to be kidding me?!!! This is what I thought. I tried it anyway. I was glad I did! It was rich and chocolatey. I'd like to try the suggestions of others with the different flavor additions. Whipped cream on top finishes it off nicely.

Louisiana Sweet Potato Pancakes

Tastey. What a good use for leftover Thanksgiving sweet potatoes! I added more milk as necessary. Tried with and without a little added vanilla extract. It was good either way. We served with a little powdered sugar and maple syrup. I also added some sliced bananas to my plate.

Kim's Virtuous Mini Pumpkin Muffins

Toddler helped me make these this morning. Good flavor. We added about a cup of mini-chocolate chips and substituted one off the eggs with flaxseed. Our mini muffins baked in 10 minutes and regular size muffins baked in 15 minutes. Tastey and fairly healthy!

Chocolate Walnut Fudge

I meant to buy sweetened condensed milk but I bought evaporated milk instead. So, I made this recipe. It turned out very delicious. It was a fairly easy recipe with tastey results.

Janet's Rich Banana Bread

Yum! I made 12 mini-muffins (for the toddler) and a loaf out of this recipe. Very moist with a tad of crust on the outside. I did mash/mix the bananas into the batter. I also substituted one of the eggs for flaxseed. Very pleased with the end result. Thanks.

No Sour Cream Beef Stroganoff

Made this recipe using our leftover meatballs instead of the ground beef. Will use this recipe again. Next time I'll be more careful when I add the wine/flour mixture...mine went lumpy..oops! (-: Thanks for the no sour cream stroganoff! (we almost never have sour cream in the house)

Sloppy Joes II

Great tasting sloppy joes! I was going to make Manwiches but had no can of Manwich. I did, however, have the ingredients for this recipe (except the green pepper). I made as directed and put it in the crockpot to meld until eating time. Yum!

Brandy or Rum Balls

Very tastey! I followed some ideas of the others and added some of the walnuts to the mixture. I only found a 12 oz. box of Nilla Wafers so that's all I used. Chopped the Nilla Wafers and the nuts in a grinder for my own sanity. I also made sure to refrigerate the chocolate mix before forming the balls. I used a "tiny ice cream scoop" with the release handle and it formed perfect shapes. I dropped the balls into a bowl of confectioners sugar and nuts and swirled them around for a good coating. I fit about 4 into the bowl. Worked great and not too messy. I will make these again!!!!
