Buttermilk Pancakes II

These pancakes are the best! I don't have to go out to the restaurant to get good buttermilk pancakes anymore. My husband made them for me and added blueberries to the batter and it was delicious...I couldn't stop eating them!

Fresh Rhubarb Pie

Chewy Chocolate Chip Oatmeal Cookies

These are excellent. Because of these cookies, my husband has made the switch from reg ch. chip cookies to oatmeal! I made these for my coworkers and they loved them. Even my friend who refuses to eat anything 'healthy' ate it, loved it, then I told her there was oatmeal in it. She was surprised. These are great.

Puerto Rican Meat Patties

These are good but didn't suit my husband's taste (what he's used to as a child). I also use the yellow discs instead and seal with fork and water. There was too much tomato paste. This is what I usally use instead, 1 1b ground meat, 1/2 diced onion, 1/2 diced green bell pepper, 3 crushed garlic cloves, 1/8 c. chopped cilantro, 1/8 c. sliced green olives, 1 tbs tomato paste, 1 pkg sazon, salt and pepper to taste.

Mini Meatloaves

Excellent! This is my husband's and my favorite meatloaf recipe. If no cheddar on hand, I just use jack or colby. I did reduce the sauce to about 1/2 only because he's not big on sweet stuff (but I love it!) Also, I use 1/2 turkey and 1/2 beef.

Great recipe and very simple. I used 1/2 turkey and 1/2 beef (just what I usually have on hand), wheat bread and about 1 1/2 the amount of salt, but used half the eggs. Excellent!!

Linda's Lasagna

This is an excellent lasagna recipe. I've tried a few and this is a keeper. My husband loves it. I was able to use Dreamfield's lasagna noodles (a healthier pasta choice similar to Barilla Plus), ground turkey and low-fat cottage cheese and mozzeralla and it still came out tasting fantastic! My husband loves it. To cut down on prep time I made the sauce the night before. I may try the suggestion of baking 30 min night before and 15 the next day. Also, I think the sauce does taste better when simmered for the hour. Oh and I use several cloves of fresh garlic cuz that's just what I have on hand and we love garlic.
