Garlic Roasted Summer Squash

This is great. I used one zucchini and one yellow squash and tossed in a few nice quartered mushrooms for texture. With 5-7 minutes left on the roasting time I threw in a nice handful of grape tomatoes for color. Lovely presentation and delicious.

Danish Pastry

Very good!! 4+ labor intensive but worth the effort. The trick of mixing the butter with flour and rolling out between waxed paper is sheer genius. Gives much better butter distribution than the traditional way of putting hundreds of little pieces of butter on the dough and rolling. This makes it foolproof. Thanks for a keeper!

Grilled Cilantro Salmon

My husband fished Puget Sound this morning and came home with a lovely fish. Always looking for new ways to prepare fish, since we eat is frequently, I tried this. It became a ceviche type meat completely lacking is the wonderful natural salmon flavor.

Crab Quiche I

I have been making this recipe crab or shrimp quiche for 36 years. First got the recipe from the Memphis Commercial Appeal. I always use Gruyere cheese as it melts in much smoother fashion. I also use about 1 Tbsp minced parsley. You can also add about 2 Tbsp Vermouth. Sliced mushrooms make a nice addition. Very versatile basic quiche. Use your imagination!

Lemon Chicken Piccata

Excellent and pretty simple to prepare. The only change I made was to use 3/4 C chicken broth and 1/4 C dry white wine. I served it with white rice cooked with a bit of chicken broth and 1 tsp lemon juice. Very nice with the lemon sauce over the chicken and rice. Definitely better restaurant quality.

Beef Stew VI

I love this after a few additions. I dredged the beef in 1/4 C four and browned it. Added the broth and herbs as directed. Added a bag of frozen mixed veggies in addition to the fresh. Added some thyme, doubled the broth as I wanted a lot of gravy and it was looking a bit skimpy. Added 1/2 C dry red wine. Whisked the left over flour with a bit of water and added that at the last hour. If you use beef broth instead of bouillon you will need salt. My husband sopped up the gravy with sourdough bread. Excellent flavor.

Sausage Barley Soup

Excellent soup after a few additions. I made it according to the original directions but found it lacked the "oomph" I wanted. I used 3 carrots, extra onion, 1/2 C barley and a can of tomatoes. It is awesome. This is a make ahead soup as it is even better the next day!

Creamy Potato Leek Soup II

I thought this looked excellent and gave it a try. I used 2 leeks and 1/2 lb bacon, about a tablespoon of chopped shallot, 1 clove garlic and 1 tsp thyme as well as salt and pepper. Delicious! Even better today! I also added a tablespoon of sherry to a bowl today. Yummy.

Soda Cracker Pie

Our family has made this forever! Try this: after it has cooled, ice it with whipped cream and refrigerate it for 6 hours. The moisture from the cream will soften the torte. To die for!!!

Melt - In - Your - Mouth Shortbread

OUTSTANDING! They do melt in your mouth. I used the 375 temp for 13 minutes and they were perfect.....all ovens are different so if yours does not turn out the perfect shortbread the first time, try it again. These are great and EASY!!

Candied Lemon Peel

This is a lot of work for small results! The flavor is wonderful BUT..a) it is labor intensive and b) no way this cooks for an hour. DO NOT leave the pan unattended! In less than 15 minutes I scorched a pot and smoked up the house and I'm not a novice! Rewind.... start over. This cooks in about 8 minutes. A veggie peeler works best....flat against the edge of a cutting board will get most of the pith off the peel. Finished product is sweet candy and a perfect garnish for a lemon dessert.

Moist and Savory Stuffing

By all means use the Pepperidge Farm...it is the best. BUT add, in addition to the sautee'd onion and celery, some mushrooms sautee'd with the celery and onion, some water chestnuts for crunch, and even some chopped oysters. An egg will bind it all together. I also throw in a generous splash of Vermouth. Start with the Pepperidge Farm and let your imagination do the rest.

Cream Puffs

Saw a similar dough recipe in 4/09 Bon Appetit used for appetizers!! Skip the pudding, start at step 2, go through beating the eggs in. Then add 1 C Gruyere and 1/4 tsp pepper! Yikes, to dies for appetizers. Follow the other hints about leaving the oven door open to cool and prevent sagging.

Chicken Wild Rice Soup I

Outstanding!! I had some left over wild rice and was looking for a soup recipe when I found this. I made it according to the directions and was very pleased. However, it makes far more than 8 servings...more like 12! Do not be tempted to increase the curry...it is perfect. I thought about it as I love curry but decided against it and am very glad I stuck to the recipe.

Chocolate Bourbon Pecan Pie

I've made this twice and the 2nd time I used 1 C DARK chocolate chips. EVeryone loved it. Also, it is critical to follow step 2 exactly. If the sugar is not completely melted you will get a gritty filling. Also might try using baker's sugar....finer and will melt faster. And this amount nicely filled a 9" crust.

Cream Soup Base

I just made this! My father in law is severely lactose intolerant so green bean casserole at Thanksgiving has always been out of the question. Our family has always used cream of chicken rather than mushroom so I substituted Lactaid milk and Nucoa margarine to the original recipe and added a couple of Tbsp. of finely minced chicken breast to the mixture. It is great!! Thanks and he will thank you too next Thursday!
