Triple Berry Crisp

I made a 1/4 batch in 4 ramekins. I put the full amount of berries on top of the crust, no sugar, added the topping and baked for 20 min. Really good! Second time I made them I cut the butter in the crust to 1/4 C - that's 1 T per ramekin. Still really good. Thanks Polly!

African Chicken Stew

This recipe is similar to what I ate in Sierra Leone, though we only had sweet potatoes. All stews like this had chopped tomatoes and sweet potato leaf. Chopped peanuts were sprinkled on top. Habenero-like chilies were widely available and made stews HOT!!! Palm oil would give this a nice color but it's hard to find in the States. Everything was cooked in iron pots over an open fire and everything was delicious! So, that's what I did to this recipe - sweet potatoes instead of potatoes, added tomatoes, used chicken and pork (though goat would have been more authentic), the garbanzos are great, and more chilies. I used a crock pot for about 5 hours on high. Thanks for the memories, Leah. It was fun making this stew!

Southwestern Cactus Salad

I'd had a jar of nopales on my shelf for quite awhile, not really knowing what to do with it. I saw this recipe and knew what to do! This recipe is just like a salsa - pretty easy, adjustable to your liking. My only thought was to cut the nopales in to small pieces to make it easier to eat.

Apple, Cranberry, and Pear Crisp

I added spices as suggested by others. I used Granny Smith apples, they were pretty hard, so I steamed them for 10 min before adding them to the soft ripe pears. I took a double sized batch to work and it disappeared fast. Good recipe, thanks for sharing!

White Bean, Spinach, and Barley Stew

Not bad, not spectacular. This recipe is like an empty canvas, just waiting to be painted. there are so many ways to go. Italian - add oregano and sausage. Spanish - more tomatoes and chilies. Indian - potatoes, peas and curry. Definately use broth, not water. Use this beginning to create your own masterpiece!

Just like everyone else says - it's quick, it's easy and it's yummy! I did use 2 T of corn starch for a cheesecake and it turned out perfect. Thanks for the recipe.

Red Lentil Curry

Actually I would give it 4 1/2 stars rather than 5. It was very good, but also very thick and pasty. I served it on rice as suggested. Lots of leftovers! Next time I'll thin it a bit and maybe not cook the lentils so long.

I've had very good results using this recipe. I think beating the egg whites and folding them in is what makes the difference. My daughter loves making these and does a better job turning the 'skivers than I do!
