Balsalmic Glazed Chicken
About this Cook
I am an English Instructor and graduate student in North Carolina. I like to read, write, draw, and spend time with my beautiful girls.
My favorite things to cook
I like to make Rachel Ray's stuff, but my absolute favorite thing to cook is a potato/poblano soup recipe that I have now lost. Gosh it was good!
My favorite family cooking traditions
My family is big on spaghetti. Mom learned from Nanny; I learned from Mom. I also used to make shrimp scampi for my dad because my mom hates seafood.
My cooking triumphs
Probably making the shrimp scampi for my dad, oh, and pulling off my first Thanksgiving by myself, and my first Christmas! :)
My cooking tragedies
Too many too count. Once a boyfriend and I tried to make gravy from Italian dressing. It was way gross!

German Apple Cake I
I've made this three times now, and it's always mushy and lacking texture. I'm sad too because the flavor is good.

Seminary Muffins
When I initially tried these muffins I wasn't terribly impressed. They aren't amazing right out of the oven, but my family adores them. I like them cold out of the refrigerator. We make them once every other week now.
