Quick Chinese-Style Vermicelli (Rice Noodles)
I made this into a meal by adding asparagus tips and cooked shrimp. I'm also big on flavor, so I doubled the chili & soy sauce, added rosemary, and actually sauted the green onion in with the garlic and asparagus. Ifyou don't like spicy food, don't increase the chili sauce, but we loved it!

Fiesta Stuffed Peppers
Excellent! I used ground deer meat because that's what I had on hand, added 1 chopped portabella mushroom and some diced garlic, left out the salt and added 1 egg because I made a larger portion than specified (2 lbs meat). The real kicker though I think was the type of salsa I used - zesty salsa, medium spice, with cilantro and jalapenos. Also added a slice of Muenster cheese over each stuffed pepper during last few minutes of baking. Loved it!

Stuffed Chicken Valentino
I cannot believe a recipe so healthy could be so tasty. The only change I made was to use garlic powder instead of salt, which I sprinkled in the baking dish and then on top of the chicken. My husband took a bite and "it made his mouth happy". Definitely a dish I will make for my next dinner party.
