Slow-Cooker Chicken Tortilla Soup

This turned out excellent, I used rotisserie chicken, black beans, and added one cup of brown rice during the last two hours. Should have made more, it was gone within in a day.

Excellent recipe, even my 10 year old enjoyed it, though she said it needed more garlic :) Fast, easy and healthy, I served it with lemon spinach couscous and salad. Fresh halibut made it an awesome dish.

Italian Vegetable Soup

I made a double batch of this, using the ground turkey, spinach and low sodium V8 version....we all loved it, though my 9 year old got suspicious when my husband mentioned V8-we got around that though!It was tasty, and with a sour dough baguette, a perfect meal for a fall day.
