Balsamic Green Bean Salad

Good, not great. I think the amount of garlic was a bit much and I'm usually a big fan. The garlic and shallot need to be very finely minced. The final product is much improved by letting it sit in the fridge for several hours.

Garlic Prime Rib

This is my new prime rib recipe. I had a 6 pound roast for Christmas dinner, so I halved the amount of seasoning. Roasted at 450 for 30 minutes, then reduced the heat to 325 for 15 minutes per pound. Checked it with a thermometer at the end of the cooking time and it was an absolutely perfect 140 degrees. Rave reviews from my family. Wouldn't change a thing.

Key Lime Pie VII

Unbelievably easy and delicious. My darling boyfriend requested Key Lime Pie as part of our Christmas dinner dessert and we loved this pie. Goes together insanely fast but don't leave it alone in the over too long! Make sure to chill this overnight, it really let's the sweet/tart/creamy flavors blend.

Baked Garlic Parmesan Chicken

Really more like 4.5 stars, but let's not get too picky. I upped the garlic in this and dredged, rather than dipped the chicken in the oil/garlic mixture. I also spiced up the breading mixture with some red pepper flakes and pepper. My BF and son are extremely picky about chicken and both devoured this recipe. An excellent hearty dinner when served with a nice green salad and a side of pasta. Definitely going into the regular rotation.

Cheeseburger Soup I

Really more like 4.5 stars. This is a good solid recipe - easy, unfussy and you probably have all the ingredients in your kitchen already! Some changes I made were using pre-cut carrot slices, omitting the celery, punching up the seasoning and using beef broth instead of chicken (since I had beef broth on hand.) I also used frozen cubed potatoes which worked well. I didn't stir in the sour cream but dolloped it on top with some sliced green onions. Even my veggie-averse 'tween had two bowls of this one. I'll absolutely make this one again!

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies rocked! When you're craving chocolate chip cookies, this is the go-to recipe. I suggest using a fairly flat baking sheet; the cookies on my deeper pan needed about 5 minutes longer in the oven than the flat pan. These came out beautifully - crispy on the edges and chewy in the middle. Thank you for such an excellent recipe!

Chocolate Cavity Maker Cake

Can this cake get any easier? I love it! I made this for my son's birthday cake last week and it was a knockout. Turned out of the pan looking fantastic and tasted even better. Like a previous review said, it's even better the next day (assuming it lasts that long - don't count on it!) I'm making this again for our Christmas dinner dessert using Grand Marnier in the cake and orange flavored whipped cream.
