Chicken Continental

This is exactly what I was looking for! I just wanted some creamy chicken and rice and this was it! I used an 8 oz can of mushrooms instead of fresh and per other reviewers used chicken broth in place of water (could not have imagine using water for this!). I used a little bit more than a cup & 1/2 of rice, almost 2 cups as there was a decent amount of liquid in the pan. Only spiced it with garlic powder, salt, and oregano. I also cut the chicken into strips. I think next time I may boil it and shred it apart. I wanted chicken and rice not a whole chicken over rice. Great recipe!

Stuffed Green Peppers I

Wonderful recipe! My only suggestion is to either buy seasoned tomato soup or season it before you add it on the peppers.

Hamburger Steak with Onions and Gravy

I think this is an excellent alternative to hamburgers or rather, just something new to do with ground beef! I loved it. Per other reviewers I substituted 1 tablespoon cooking sherry with 1 teaspoon vanilla extract. The first time I made this I did not double the gravy and there ended up just not being enough. I also didn't serve it over anything. Second time I doubled the gravy (it may seem like a lot of flour but trust me you need all of it!), and served it over rice and it was heavenly! The extra gravy tasted wonderful with the rice. Adding this to my book! Thanks.

Bacon Cheeseburger Rice

I gave this 3 stars because it was eatable but no where near a bacon cheeseburger rice. I made it exactly as stated in the recipe (sans the pickles because... just ew), and it came out tasting like nothing but hamburger and rice. And I used instant rice but 5 minutes was just not long enough for the method it was cook as it tasted slightly crunch/chewy. I will not make this again.

Baltimore Hash

While this is a decent and healthy recipe, I really didn't find it to be all that great. I was also shocked to see the only spices it called for was salt and pepper! I followed the basic recipe except I used regular tomatoes that I diced. NOTE: When doing it this what you MUST add some sort of liquid to get the boil going. I added beef stock and water enough to cover the bottom of the pan. I added parsley, oregano, basil, onion, and garlic powder on top of the salt and pepper and it still came out kind of bland. Once completed and served just adding salt and a little pepper made a huge improvement. My toddler wouldn't touch it but I got my finance to eat it and he hasn't touched a vegetable in weeks, hence my reference to it being healthy. In my opinion this is an easier and cheaper beef stew/pot roast. I'd probably make it again but I will just have to find something else to better flavor it.

Zippy Chicken Corn Chowder

This was AMAZING! I am so glad I tried it. Quizno's used to carry Chicken Corn Chowder and I was obsessed... then they discontinued it and I have not been satisfied since. This was EVER BETTER!! If I could give it 10 stars I would. The only thing I change was I used Green Onions instead of Leeks since my store did not have them. I also left out the hot sauce due to personal taste. Finally, I left out the red pepper and used the frozen southwestern corn in the steamed bags instead that have chopped red peppers in them. Perfect recipe, I will make again and again.

Extra Easy Fudge

I looked at many other recipes before choosing this one and this BY FAR was the easiest and the cheapest. And you don't sacrifice any taste or anything! This was TO DIE FOR! After my friend made it the way the recipe called for I went back tonight and made it with White Chocolate Chips, Cream Cheese Frosting, and Dried Cranberries. OH-MY-GOD!!! This is a very forgiving recipe and possibly the best fudge I have ever had.

Texas Hash

Ridiculously awesome! One of my guests even commented about passing the recipe on to his boss (owns a restaurant). I did make a little bit of changes just due to lack of supplies. I did not use the diced tomatoes, tomato paste, or green peppers. Instead I used pizza sauce (all I had!) and 1/2 cup chunky salsa. Also instead of regular white rice I used the black beans & rice mix you can find in the Latin (or ethnic?) food section. I also covered the whole top of the casserole dish with the processed American cheese... as I love cheese :) If I would suggest anything to anyone about changing the recipe it would be change out for the black beans & rice instead... it totally adds the missing kick!

Beth's Spicy Oatmeal Raisin Cookies

These were WONDERFUL cookies! I didn't have all of the items on hand (it happens when you're broke!) so I substituted a few items. I will list them just in case anyone else is in my boat :) I did not add vanilla since I did not have any, I also doubled the cinnamon and per posters I added 1/4 tsp ginger and 1/2 tsp of nutmeg. I also did not use cloves since I did not have any. I used a whole cup of butter and omitted the shortening, and finally, I did not have "rolled oats" so I just used packed instant oatmeal. It took about 6 packets of Cinnamon & Spice instant oatmeal to equal 3 cups. I was a little uneasy about it but they turned out wonderful! I was able to roll the dough around in my hand to make little balls and I cooked it like that. BEAUTIFUL!

Salisbury Steak

I did not think this recipe was that good at all. The patties kept falling apart and by the time it was read to serve it was just cooked ground beef with sauce. I was going to give this 3 stars but my toddler cleaned her plate (!!!?) and my boyfriend said it was "pretty good". I, personally, will not be making this again unless asked.

Glazed Meatloaf I

This meatloaf was to die for! My boyfriend and 2 year old ate until the plate was clean! I made a few changes as I did not have all of the ingredients. For the sauce I used a tsp of regular French's mustard instead of dry, I only had dark brown sugar so I used that, I added Mrs. Dash and Italian Herb Seasoning since I did not have the beef bouillon, and I used season bread crumbs instead of fresh bread. I also added a couple of tsp of minced garlic. I used only 1lb of beef so I cut everything in half. I ended up having to make another serving of sauce to cover the meat so next time I just won't cut that in half. GREAT recipe... will definitely make again and often.

Garlic Mashed Potatoes Secret Recipe

This was a GREAT recipe! These were hands down the best mashed potatoes I have ever had/made. I made some changes since I did not have everything on hand... I used regular Russett potatoes instead of red, Grated Parm. Cheese as I did not have any Romano, I added just a couple of pinches of seasoning, and a splash of milk as the y did not seem creamy enough. Absolutely WONDERFUL! Will definitely make again.

Baked Teriyaki Chicken

This turned out WONDERFUL! I served it with some white rice that I mixed soy sauce, ginger powder, Italian herb spices, and some cumin powder with. It had an excellent flavor and texture. Tip though for next time... line the pan with foil!! :-|

Baked Zucchini Chips

I followed all of the suggestions including double breading and spraying each side down in pam but they still did not turn out very "crispy" as the breading seemed to want to slide off as I flipped them. Either way they were DELICIOUS! They had a flavorful outer coating and a creamy warm zucchini center. I served with ranch and my boyfriend as well as my 2 year old could not get enough! I used 1/2 cup seasoned bread crumbs, 1/2 cup parm cheese, and a mix of garlic pepper, garlic salt, and italian spices for the breading and it was to die for!

Spinach Stuffed Chicken Breasts

I made this tonight for dinner and it came out fabulous! I took the other reviews suggestions and pan fried the chicken after pounding them down. I attempted to roll them but due to the partial cooking it more turned out like folding them over. I baked at 375 for 30 min and 5 min under the broiler and it came out delicious! The only issue I had was that I had a TON of spinach mixed left over though I suppose I could use it for something else. Thanks! :D
