Chocolate Flan Cake

I don't usually throw up 5 stars, but this recipe definitely deserves it. I followed the recipe as is but baked at 350 for 125-130 minutes. Removed from oven and let sit in the pan/water bath for 10 mins, removed and placed on rack for 10 more mins. Removed foil and inverted onto a plate without issue. Chilled overnight. I couldn't resist eating a big slice for breakfast. Delicious! Even my husband who dislikes flan loved this cake.

Beef Stew VI

Holy yumminess! This was really good. I did take the advice of a few other reviewers. Here’s what I did: Put 1/4 cup flour in bag along with 1 tsp of garlic powder, 1 tsp onion powder & 1/2 tsp pepper. Put meat in and shook it up. I then seared the meat in a pot then scraped off the bits at the bottom while adding the liquid. You will may want to add more later towards the middle/end of the cooking time, I added about ½-1 additional cup of water. Lastly, I added 1 tbsp ketchup & Worcestershire. So much flavor! My husband is a super picky eater and he really enjoyed this stew.

Chef John's Blueberry Muffins

I halved this recipe and substituted the sour cream for plain Greek yogurt since it's all I had on hand. I also used whole wheat flour instead of white. I then sprinkled the tops with a cinnamon and sugar mixture prior to placing in the over. Baked for 23 mins, made 8 muffins. Yum!

I halved the recipe and used ground beef instead of lamb. I'm sure it's even better with the lamb. My husband, who is a picky eater, really enjoyed this dish. It's a keeper!

Slow Cooker Pulled Pork

I used a 5 lbs shoulder cut (aka Boston Butt). Sow cooked for 6 hours, shredded, placed back into slow cooker, added Sweet Baby Ray's BBQ Sauce and cooked on high for 30 mins. Once done, I toasted Kaiser Rolls and served. It got raving reviews.

Strawberry Muffins

Yum! I used only 1 1/2 cups of whole wheat flower. Will use extra strawberries next time. Sprinkled cinnamon and sugar on the muffins prior to placing them in the over.

I made a pumpkin loaf and a pumpkin bundt cake out of this. It was delicious! Everyone at work raved about it. Needless to say it disappeared pretty quickly.

Melissa's Turkey Meatloaf

This was very good. I used 2lbs of ground turkey and omitted the milk. I also added a tad bit more bread crumbs and used ketchup instead of the soup. It came out great! even my picky husband enjoyed this healthy alternative to meatloaf. I will def make again.
