Buckeyes I
These were good. I followed the instructions, used a double burner, Richard's Creamy Peanut butter (100% peanuts), and Ghiradhelli semi sweet chips. I refrigerated the peanut buetter balls for a couple of hours so they were really cold, and dipped the balls in batches, keeping the rest cold, so they would not "sweat". They turned out perfectly shaped like little balls. The only negative is they were really sweet! My kids of course love them but they were a bit sweet for even me, and I have a real sweet tooth. Good recipe, though next time, I will use less powdered sugar!

To Die For Blueberry Muffins
WOW. I used brown sugar in the topping too and these were incredible. Watch the time in the oven, don't overmix, and I used frozen wild blueberries, defrosted, and these were fantastic. Mmmmm

Spinach Stuffed Chicken Breasts
I have made this in the past and it has turned out a little dry. I am not a huge mayo fan so I switched it up a bit. For the filling, I use a little cracked black pepper and salt, 1/3 cup canola oil mayo, 1/3 cup feta crumbles, 1/3 c plain nonfat Fage greek yogurt, some toasted pine nuts, a little crushed garlic, and lots of fresh baby spinach, chopped up. I butterflied the chicken, then I sprayed a pan and browned the chicken a bit. while preheating oven. Then I cooked some turkey bacon up in the microwave. I mixed my feta/spinach filling and stuffed it into the breast pockets Using broken skewers (I could not find my toothpicks!) I secured a couple of pieces of bacon to each breast and roasted in the oven for about a half hour. They were delicious. Not as tart/sour as they have been i the past, thanks to the yogurt, and healthier too. They were moist, browned and perfect! YUM
