I loved this- very different, I thought, for a casserole. And low carb! I pretty much followed the recipe and the majority of the commenters. I cut up the chicken and browned it, I also sauteed the mushrooms and garlic for a bit before adding some wine, then the drained spinach. I put the spinach-mushroom mix on the bottom, but I was tempted to mix in the sauce and chicken with the spinach. I might try that next time. I also forgot the butter for the sauce. I mixed everything cold (sub. 2% milk for cream) and put it on top and it worked out great! I also crisped up some prosciutto for the bacon- yum! Personally, I think I'd like to double the spinach and maybe more of the sauce to make it more like a creamed spinach on the bottom. Can't wait to try it again soon!
