15-Minute Dinner Nachos Supreme

This is a great, easy recipe, but it does need a lot of tweaking. First, the rice will not be cooked in 5 minutes, not even 10. I don't think it had enough liquid. I ended up putting it in a casserole dish, top with cheese and stuck it in the oven for 10 minutes. Then, I served with a sweet & spicy corn salsa, greek yogurt (great, healthy sub for sour cream), and shredded lettuce. Pretty good, easy. It could use some veggies added in the mix, and less rice. I only used 3/4 cup of rice and I think it was a great ratio to the 1 pound of meat. I also ground turkey breast- pretty good meal or heavy snack.

My Mom's Parmesan Chicken

This recipe is a keeper! I used chicken breasts, as many others did, and it was so moist. I was afraid to pour the wine over the chicken, thought it would make it soggy, but that must be the reason for success! I used sherry- wonderful, hubby loved, too.

Chili Chicken Stew

So yummy, easy, and delicious! I followed a reviewer's advice and made it in the crockpot- I threw in everything in the morning- raw peppers and onion, raw chicken, and a bag of frozen veggies- and it was pretty good. I served it with some tortilla chips and sour cream, and that really made it! I plan on making it again this weekend- thanks for the recipe and all the advice!

Baked Honey Mustard Chicken

This was weird. The paprika did seem to take over the flavor and it was just...kinda bitter? I did use a no salt added dijon mustard, but even salt didn't make this more palatable. I forced myself to eat it because I was dumb and made a big batch of this. I ended up wiping off the sauce and making the chicken into chicken salad. I won't try again- I don't feel like wasting more honey & mustard! I shouldn't have used that pricey dijon ;)

Edamame Dip (Edamole)

Great, healthy, protein-packed snack! I'm a big wimp and can't handle much spicy stuff, so I replaced the chipotle pepper with a roasted red pepper. I still added some hot sauce and it needed more olive oil, but that could've been due to the red pepper. It's very good, but I think I might add some sauteed onion, maybe some chopped tomato to make it more like guacamole. Great recipe- so glad I found it. Thanks!

Baked Stuffed Zucchini

This was so tasty and delcious and I love that it is low carb! I was looking for low carb veggie side dishes and I am so glad I found this one- it is so good! I followed the recipe exactly except maybe I used more cheese- can't help it!

Garlic Cheddar Chicken

Wow-I thought this was so incredible for such a simple dish! I followed the recipe exactly and the chicken was so moist, tender, and most importantly, garlicky! I used smart balance and it turned out great.

Pasta Salad with Homemade Dressing

Love this recipe! It is very versatile, but I loved the dressing as much as the others. I used dijon instead of ground mustard and summer sausage instead of pepperoni- yum!

Mexican Chicken and Black Bean Salad

This was so good and easy! I didn't find this too salty at all. I did make my own taco seasoning, but I did use salt. I used low sodium tomato sauce, as suggested, and I rinsed my black beans. I added some sauteed onion and peppers and some cilantro would've been good. Very easy and delicious!

Slow Cooker Thai Peanut Pork

This was an interesting one...overall, we enjoyed it, but I think maybe it depends on the teriyaki sauce you use? I used a more soy sauce consistency teriyaki- I think I would've liked more flavor. Anyway, I also loved really peanut-y peanut sauce, so I wished I put more peanut butter in. I already added a little more than I should've! But, it was nice to have a different kind of dinner- I put the pork and sauce over some whole wheat noodles and snow peas- I'll try it again with another teriyaki sauce.

Chicken Florentine Casserole

I loved this- very different, I thought, for a casserole. And low carb! I pretty much followed the recipe and the majority of the commenters. I cut up the chicken and browned it, I also sauteed the mushrooms and garlic for a bit before adding some wine, then the drained spinach. I put the spinach-mushroom mix on the bottom, but I was tempted to mix in the sauce and chicken with the spinach. I might try that next time. I also forgot the butter for the sauce. I mixed everything cold (sub. 2% milk for cream) and put it on top and it worked out great! I also crisped up some prosciutto for the bacon- yum! Personally, I think I'd like to double the spinach and maybe more of the sauce to make it more like a creamed spinach on the bottom. Can't wait to try it again soon!

Moist Turkey Burgers

Great recipe, but I still added a bit more soy & worcestershire sauce- it looked dry. I also left out the breadcrumbs, but it made very delicious burgers! Especially with a chunk of mozzarella stuffed inside :o

Jimmy's Mexican Pizza

I love recipes like this- easy, comforting and has you thinking, why didn't I think of this? I used ground turkey breast and uncooked flour tortillas- yum. If you can find these, I recommend them for dishes like this- it was like thin pizza dough!

Baked Chicken Breasts Supreme

Very good! The yogurt tenderized the meat so well- pretty flavorful- maybe could use a little more jazzing up, but it was very good overall. Very easy, too, I marinated the breasts for about 4 hours before baking and it was delicious! Hubby loved it, too!

Grilled Peanut Chicken

Very yummy- I cooked it on a grill pan, and we did get the delicious caramelization. It is pretty thick- we did not thin it down, but it probably would have been messy if we tried to do this on a regular grill. But, it was delicious and I think it's a new favorite!

Turkey and Quinoa Meatloaf

I changed my review after I followed the recipe! I made the mistake of adding spices last time and it was overseasoned. I don't like spicy food, but I took the gamble and used almost a tablespoon of hot sauce. It was great- just a little kick to get the metabolism going! I found the recipe for the sauce topping to be kind of weird and too sweet- I used about a tablespoon of brown sugar and added tomato paste. Next time, I think I'll use my ketchup/dijon/brown sugar glaze. Love this recipe!
