Cha Cha's White Chicken Chili

Reviewed: Dec. 22, 2007
I loved this! I can't handle too much spice, but I still want flavor, so I followed the alterations mentioned and left out the jalapenos, used 2 cans of green chiles, and pureed one can of beans. I used rotisserie chicken, topped with the cheese and some sour cream and it was wonderful!! It's perfect for this holiday weekend!

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 26, 2007
Very yummy- went over very well! I brought them to Christmas Eve dinner and my brother-in-law told me he thought it was the best dish there! I sauteed some onion before putting in the stems and garlic. I let that cook down, then added some white wine. Maybe that affected the cooking time- it needed way more than 20 minutes. I will make them again- loved them!

Grilled Peanut Chicken

Reviewed: Jan. 8, 2008
Very yummy- I cooked it on a grill pan, and we did get the delicious caramelization. It is pretty thick- we did not thin it down, but it probably would have been messy if we tried to do this on a regular grill. But, it was delicious and I think it's a new favorite!

Hot Spinach Dip

Reviewed: Feb. 24, 2008
This was so good- will definitely be a favorite of mine now! I used fresh spinach, added some jarred, minced garlic, and onion powder. I baked at 325 for about 20 minutes, then put some more cheese on top and broiled until browned. Delicious- thanks so much for this recipe!

Chicken With Portobello Mushrooms and Artichokes

Reviewed: Feb. 25, 2008
I thought it was just OK- the sauce was very thin, and I had to add a little cornstarch. It was all right for dinner, and when I tried the leftovers for lunch, it tasted even more bland! Usually, leftovers taste better. I don't know, maybe I'll try again and add more of something. Was pretty easy!

Chili Chicken Stew

Reviewed: Mar. 4, 2008
So yummy, easy, and delicious! I followed a reviewer's advice and made it in the crockpot- I threw in everything in the morning- raw peppers and onion, raw chicken, and a bag of frozen veggies- and it was pretty good. I served it with some tortilla chips and sour cream, and that really made it! I plan on making it again this weekend- thanks for the recipe and all the advice!

Baked Sesame Chicken

Reviewed: Apr. 7, 2008
Very tasty! My husband & I loved it! I followed the advice of the other reviewers and added onion powder and ground ginger to the dry ingredients. I also dipped in soy, then the flour mixture, then straight to a baking sheet. Delicious! This would make a great appetizer- put tenderloins on skewers- yum!

Baked Stuffed Zucchini

Reviewed: Apr. 22, 2008
This was so tasty and delcious and I love that it is low carb! I was looking for low carb veggie side dishes and I am so glad I found this one- it is so good! I followed the recipe exactly except maybe I used more cheese- can't help it!

Goat Cheese and Spinach Turkey Burgers

Reviewed: Oct. 14, 2008
This recipe absolutely needs some olive oil, or eggs, like the other suggestions, to give some moisture. I read one review that said do not overcook to not dry out, but I don't think I did overcook them. Maybe I did, but they looked just like the picture- little brown on top- looked delicious, but were SO incredibly dry. My husband did not eat his, which says a lot! I finished mine with some olive oil and my salad to get it down! I thought for sure this recipe called for olive oil and I forgot...so, I will make again because I love goat cheese and I do like the broiler idea- very easy dish. So, my warning is to add something to juice it up!

Edamame Dip (Edamole)

Reviewed: Oct. 14, 2008
Great, healthy, protein-packed snack! I'm a big wimp and can't handle much spicy stuff, so I replaced the chipotle pepper with a roasted red pepper. I still added some hot sauce and it needed more olive oil, but that could've been due to the red pepper. It's very good, but I think I might add some sauteed onion, maybe some chopped tomato to make it more like guacamole. Great recipe- so glad I found it. Thanks!

Aunt Jewel's Chicken Dressing Casserole

Reviewed: Oct. 27, 2008
Eh. Not much flavor if you don't jazz it up with some seasonings, or some sauteed onion and celery like others suggested. I didn't have time to mess with it, so I went with the recipe as is and it was very blah. I did use an extra package of stuffing, which it did need, but couldn't save it!

Spiced Chicken Loaf

Reviewed: Oct. 28, 2008
WOW!!! This was a home run at our house! I followed the recipe, less the garlic pepper. But, I did put a ketchup, dijon, and brown sugar glaze, as suggested by others. I mean, this was just amazing- so moist, so much flavor- thank you SO much for this recipe!

Italian Green Beans

Reviewed: Nov. 5, 2008
I was looking for a way to jazz up a can of green beans and this worked great! I eyeballed 2 tablespoons of butter and 2 tablespoons of italian dressing, then added a small can of beans. There was a lot of sauce left, but it still gave the beans a nice flavor- I will try it with fresh next time, but we loved it with canned!

Mondi's Super Simple Chicken

Reviewed: Nov. 5, 2008
Eh, this was OK...it was a little dry. I did use chicken breasts. Thought it might be better if I made holes in the chicken for the butter to seep in.

Baked Chicken Breasts Supreme

Reviewed: Nov. 5, 2008
Very good! The yogurt tenderized the meat so well- pretty flavorful- maybe could use a little more jazzing up, but it was very good overall. Very easy, too, I marinated the breasts for about 4 hours before baking and it was delicious! Hubby loved it, too!

Slow Cooker Chicken Stroganoff

Reviewed: Nov. 30, 2008
This was pretty good, but I think it'd be even better if I add some more spices and salt next time. I followed the recipe, except I did add about 1/4 of a cup of white wine to the soup mixture. The chicken did brown nicely. I used lower sodium cream of chicken soup and maybe that was part of the problem with it being a touch bland. It was very easy and I will try again with some more salt and spices!

Sausage Egg Casserole

Reviewed: Dec. 22, 2008
YUM!! I thought this was quite good and I am so glad I tried it! I didn't have time to let it sit overnight and it's still yummy right out of the oven. I bet it'll be even better tomorrow. I diced up some poblano peppers instead of green chiles and I sauteed them with the onion and mushrooms. I also used wheat flour to try to keep it a little healthier and it's great! I mashed up the little lumps of flour as much as I could and everything turned out wonderful! Thanks for the recipe!

Mexican Chicken and Black Bean Salad

Reviewed: Feb. 5, 2009
This was so good and easy! I didn't find this too salty at all. I did make my own taco seasoning, but I did use salt. I used low sodium tomato sauce, as suggested, and I rinsed my black beans. I added some sauteed onion and peppers and some cilantro would've been good. Very easy and delicious!

Parmesan Puffs

Reviewed: Feb. 18, 2009
These were very tasty, but I agree with other reviewers, a little salt would've been good. But, they were very good! Getting the drops of dough so small was a little hard, but I'm thinking more experienced cooks with better tools than I have will have no problem!

Raspberry-Glazed Rosemary Chicken

Reviewed: Feb. 18, 2009
This was very tasty and very easy. My favorites! I actually used dijon mustard and thought it worked- you can't taste the mustard, it just cuts the sweetness of the preserves. Thanks for this recipe!
