Baked Honey Mustard Chicken

Reviewed: Jan. 27, 2011
This was weird. The paprika did seem to take over the flavor and it was just...kinda bitter? I did use a no salt added dijon mustard, but even salt didn't make this more palatable. I forced myself to eat it because I was dumb and made a big batch of this. I ended up wiping off the sauce and making the chicken into chicken salad. I won't try again- I don't feel like wasting more honey & mustard! I shouldn't have used that pricey dijon ;)

Slow Cooker Thai Peanut Pork

Reviewed: Jan. 27, 2011
This was an interesting one...overall, we enjoyed it, but I think maybe it depends on the teriyaki sauce you use? I used a more soy sauce consistency teriyaki- I think I would've liked more flavor. Anyway, I also loved really peanut-y peanut sauce, so I wished I put more peanut butter in. I already added a little more than I should've! But, it was nice to have a different kind of dinner- I put the pork and sauce over some whole wheat noodles and snow peas- I'll try it again with another teriyaki sauce.

This was pretty good- I made this following the recipe except I substituted sweet potatoes, went well with the carrots. Yum!

Pizza Casserole

Great, easy recipe! I found some turkey italian sausage and used that instead of beef. I didn't add the pepperoni, but it was still great- hubby approved!

15-Minute Dinner Nachos Supreme

Reviewed: Nov. 22, 2010
This is a great, easy recipe, but it does need a lot of tweaking. First, the rice will not be cooked in 5 minutes, not even 10. I don't think it had enough liquid. I ended up putting it in a casserole dish, top with cheese and stuck it in the oven for 10 minutes. Then, I served with a sweet & spicy corn salsa, greek yogurt (great, healthy sub for sour cream), and shredded lettuce. Pretty good, easy. It could use some veggies added in the mix, and less rice. I only used 3/4 cup of rice and I think it was a great ratio to the 1 pound of meat. I also ground turkey breast- pretty good meal or heavy snack.

Chicken Florentine Casserole

Reviewed: Nov. 10, 2010
I loved this- very different, I thought, for a casserole. And low carb! I pretty much followed the recipe and the majority of the commenters. I cut up the chicken and browned it, I also sauteed the mushrooms and garlic for a bit before adding some wine, then the drained spinach. I put the spinach-mushroom mix on the bottom, but I was tempted to mix in the sauce and chicken with the spinach. I might try that next time. I also forgot the butter for the sauce. I mixed everything cold (sub. 2% milk for cream) and put it on top and it worked out great! I also crisped up some prosciutto for the bacon- yum! Personally, I think I'd like to double the spinach and maybe more of the sauce to make it more like a creamed spinach on the bottom. Can't wait to try it again soon!

My Mom's Parmesan Chicken

Reviewed: Nov. 3, 2010
This recipe is a keeper! I used chicken breasts, as many others did, and it was so moist. I was afraid to pour the wine over the chicken, thought it would make it soggy, but that must be the reason for success! I used sherry- wonderful, hubby loved, too.

Garlic Cheddar Chicken

Wow-I thought this was so incredible for such a simple dish! I followed the recipe exactly and the chicken was so moist, tender, and most importantly, garlicky! I used smart balance and it turned out great.

Pasta Salad with Homemade Dressing

Reviewed: Aug. 16, 2010
Love this recipe! It is very versatile, but I loved the dressing as much as the others. I used dijon instead of ground mustard and summer sausage instead of pepperoni- yum!

Moist Turkey Burgers

Reviewed: Aug. 16, 2010
Great recipe, but I still added a bit more soy & worcestershire sauce- it looked dry. I also left out the breadcrumbs, but it made very delicious burgers! Especially with a chunk of mozzarella stuffed inside :o

Jimmy's Mexican Pizza

I love recipes like this- easy, comforting and has you thinking, why didn't I think of this? I used ground turkey breast and uncooked flour tortillas- yum. If you can find these, I recommend them for dishes like this- it was like thin pizza dough!

Turkey and Quinoa Meatloaf

Reviewed: Feb. 18, 2010
I changed my review after I followed the recipe! I made the mistake of adding spices last time and it was overseasoned. I don't like spicy food, but I took the gamble and used almost a tablespoon of hot sauce. It was great- just a little kick to get the metabolism going! I found the recipe for the sauce topping to be kind of weird and too sweet- I used about a tablespoon of brown sugar and added tomato paste. Next time, I think I'll use my ketchup/dijon/brown sugar glaze. Love this recipe!

Delicious Chicken Casserole

Yum- we loved this! But, I cannot imagine this without some kind of vegetable added, it was slightly soupy, but still yummy with broccoli added. I used boneless breasts and it turned out great.

Chicken Meatball Soup

Reviewed: Jan. 13, 2010
I pretty much followed this recipe exactly and it was delicious! I followed other's suggestions and added some sauteed onion and garlic to the meatballs, along with some poultry seasoning and garlic powder. I liked the meatballs baked- nice color and flavor. I also skipped the parsnips and added zucchini and white beans with the meatballs. The beans sank to the bottom, of course- but it was so delicious!

Aimee's Quick Chicken

I love this quick, easy recipe and so does my husband! I usually just put a bit of teriyaki and dijon on the breasts, then swirl together. Then, I add bacon bits and parmesan and bake! Always tasty and delicious- thanks for this great go-to recipe!

Restaurant-Style Hashbrown Casserole

Reviewed: Dec. 29, 2009
This was awesome, but I am leaving a star off because I think you do need to follow some reviewer's advice! I did cut down on the butter and replaced with sour cream- just eyeballed it. I made this with cream of chicken soup one time and cream of mushroom another- both great! I also cooked a bunch of sweet onion down in butter and olive oil. My family loved it- this one is my staple!

Easy Flat Iron Steak in Wine Sauce

Reviewed: Dec. 21, 2009
Wow. This was a HUGE hit in my house- my husband freaked out over it! We usually prepare flat iron steak with a yummy marinade and grill it. I've always been pleased, but my husband proclaimed this was THE best flat iron he's ever had! So easy, too. I also added some onion to the oil after removing the steaks and let them get a little tender before adding some marsala wine. I can't wait to try it with red wine! Oh, it was delish!

Stuffed Green Peppers I

Reviewed: Nov. 28, 2009
Love this recipe, but it does need extra seasoning. I liked that it wasn't too much rice and I used ground chicken to cut down on calories. I added some seasoning to the meat mixture and the soup, I think it could've used more. But, it was great, easy comfort food.

I was looking for something quick and satisfying for lunch, since my hubby was working hard on the yard. It was perfect- he loved it! This is a great idea, I'd probably add some onions next time, but it was so tasty as is- thanks for the recipe!
