Baked Corn

This was incredibly good. It makes A LOT! I added shredded mozarella and shredded smoked gouda to the top. Nice browning and cheesy crisp on top.

Easy Lasagna III

Very good. Not saucy enough for me, but my husband liked it. I used ricotta instead of cottage cheese to make it creamier, which could be why it wasn't saucy enough. I also cooked the beef with garlic and chopped white onions. To the sauce I added cumin, garlic, kosher salt, oregano, and torn fresh basil. VERY GOOD flavor.

Harvested Chicken Stew

I tried to add potatoes to give it something more, and I didn't want to use noodles. It was not a good idea. My husband said that I should have used rice, yellow saffron rice or white rice, just to give it more body. Other than my mistake this is a good stew.

Tomato Spinach Salad

A great base salad, with a wonderful dressing. I added cubed fresh mozzerella (crumbled feta would be great as well), tore up some fresh basil to give it some sweet freshness. Homemade croutons topped it off. To make the croutons, by a loaf of crusty French bread (day old works best), cut into cubes. Coat the bottom of a pan with extra virgin olive oil (adjust size of pan and amount of EVOO to the number of croutons you plan on making). Add fresh garlic, kosher salt and pepper to taste to the EVOO and sautee for a few minutes. Add cubed bread and toss until brown. Croutons will be crispy with a little bit of chewy on the inside. Let sit on heat for a bit to make completley crispy. Enjoy, on this salad and many others.

Simply Lemon Baked Chicken

Great! I rubbed minced garlic to the inside and outside. I also baked covered for 1 1/2 hour and uncovered until done. That way it says incredibly juicy, and has a brown crispy skin.

Sesame Chicken Stir-Fry

This is an excellent dish. I omitted the peppers because no one in my family likes them, but I added diced baby carrots. The veggies stayed really crisp, just the way we like them. So if you like it a little bit softer, I recommend steaming them first. I cooked the chicken with fresh minced garlic and lemon juice to give it an extra kick and it was fantastic. Even my picky four year old ate everything on her plate!
