Black Bean and Couscous Salad

i first made this years ago and have enjoyed it regularly since. I usually adapt it to what I have on hand and I often make it a pasta salad instead of couscous. I lime and cumin to taste. Amazing flavor, I highly recommend this recipe.

Grape Banana Salad

This is very similar to a family staple of mine. The difference is it's Grapenut salad when I make it. 1 or more cups or grapenuts cereal MAKES this recipe.

Caramel Oatmeal Pudding Cookies

I thought this made an excellent non chocolate No-bake cookie.I was going to take these to work since there were so many, but my husband and I ate them all up! I plan to make regular no-bakes and these and plate them together for contrast next time. Thanks for the recipe!!

Southwestern Pasta Salad

I didn't follow the recipe exactly. Just used what I had on hand, Including suddenly salad mix instead of oil and dressing and noodles separately. TURNED OUT AMAZING. I loved the cumin flavor in it. I only had canned diced tomatoes but I look forward to trying it with real ones. or cherry tomatoes.

Quick Gnocchi

I've only had gnocchi a few times, so I don't know how mine compared but they were really good if a little bland. I followed one reviewers advice and after making the dough (No idea if I added enough flour or too little) I scooped it into a large plastic bag and cut the corner off. Then I just squeezed it out and cut with scissors dipped in flour. This was a two person job though. My only regret was using canned sauce because it took longer than I thought to do the gnocchi and we were hungry. Didn't like the sauce but the gnocchi were good. I plan to make these with spinach and cheese gnocchi and a sausage marinara sauce for a party next week.
