Lemon Whip Dessert

Yikes! This was super sweet! It really started out well, but by the time I served it, it was a bit much. I would love to try this one again, but am wondering if anyone can clarify the ingredients for me? Maybe I made a mistake. 1/ I used Minute Maid frozen lemonade concentrate. Should I have used an unsweetened concentrate? 2/ Sweetened condensed milk is only sold here in 300ml (apx 8.5 oz) tins, so I had to use almost 2 tins to make up 14oz as specified in the recipe. Is this the correct amount of s.c. milk? Any advice would be appreciated!

Irish Cream Chocolate Cheesecake

YUUUMMMMMM! Very dense and rich. I used 1/2 c of Baileys in the batter, and instead of a water bath, placed a roasting pan 1/2 full of boiling water on the rack below the cake. Gave it an extra 15 minutes baking time, and left it in the oven overnight after baking until cool. (Greased and floured the pan before baking.) No cracks. perfect cheesecake. Great recipe!

Pumpkin Crunch Cake

This was a pretty good recipe, but I tweaked it a bit. As suggested by another reviewer, I used pumpkin pie filling instead of pumpkin puree. I used 3 eggs, 1/4 cup of evap milk, and omitted the sugar. As I was using a spring form pan, I felt this would need a crust of some sort, so I mixed the box of cake mix with 1/3 cup melted butter. I then used half this mixture to create a crust, which I baked blind at 350F for about 10 minutes, until it began to brown. I then added the pumpkin mixture, and over this the remaining cake/butter mixture. I left the pecans out until the last 20 minutes of baking to prevent them from burning. I baked the cake for 80 minutes at 350. Note: if you use a spring form pan, with the bottom crust as I did, I suggest placing a foil lined baking sheet underneath it during baking. Some melted butter melted out of the seam of my pan, and could have been a messy cleanup if I didn't have the baking sheet there. The finished cake was served with vanilla ice cream. I will be making this again. Good recipe!

Amish White Bread

Excellent excellent bread recipe. Finally, a recipe that didn't become a lump of lead in the oven. Even when I wasn't careful and baked it on a higher rack, this bread was very forgiving. I removed it from the pans, put it back in the oven on a lower rack for 5-7 minutes, and the bottom browned beautifully. I will definitely use this recipe again. Thank you!!!
