Baked Lemon Chicken

This turned out perfectly. The only modifications (and I am one of those people who ALWAYS modifies a recipe) from the original were that I sliced one very large breast horizontally into two thinner pieces, and the last five minutes I sprinkled on parmesan and turned the oven to the broiler setting.

Pita Chips

These went great with an artichoke/jalapeno dip, and everyone was impressed that they were homemade. I should mention that I did slice all pockets in half, which I will always do from now on - and still cooked for exactly 7 minutes.

Peach Pie the Old Fashioned Two Crust Way

I give this recipe 5 stars for the peach filling, This pie was enthusiastically gobbled up by my guests, but I only give it 4 stars overall because I did a homemade crust (Pastry for Double Pie-Crust, also on here), and can't help but think that added to the perfection. I also reduced the sugar to 3/4 cup and added a 1/4 tsp. of ginger, both based on other reviewers. I also did a lattice top which looked a bit messy as it was my first attempt ever, but everyone was still impressed. I will make again for sure.

Peanut Butter Bars I

I reduced the confectioner's sugar to 1 1/2 cups based on other reviews, and omitted the peanut butter from the chocolate topping. The only mistake I made was in using an 8x8 pan, which resulted in thicker bars. I wouldn't do this again, as I thought it made the bars a little intense. But everyone seemed to love them!

Hot Feta, Artichoke and Roasted Red Pepper Dip

This was excellent and the only reason I am not giving it 5 stars is due to the fact I made a few modifications. I replaced the mayo (not a fan) with light sour cream, reduced feta to one cup, adding one cup of mozzerella instead, added one large crushed garlic clove, fresh ground black pepper, and instead of just parmesan, I used a parmesan/romano/asiago blend. I also broiled it for an additional 5 minutes to crisp up the top. Served with pita chips. I think next time I might add jalapeno to give it some heat.

Cheryl's Spinach Cheesy Pasta Casserole

I would give this 5 stars except that I tweaked the recipe a little...I sauteed fresh spinach leaves for about 1 1/2 minutes with 2 cloves of crushed garlic and about 1/3 of a finely chopped red onion, and instead of cheddar, I used parmesan in conjunction w/the mozerella. I also add defrosted, quartered meatballs from Trader Joe's because my boyfriend likes meat. I cooked it covered with aluminum for 30 mins, uncovered for 15 mins. Very good!

Classic Peanut Butter Cookies

I give this 4 stars as-is, but with the addition of 1 tbs. vanilla and 1 cup of peanut butter chips, this recipe is perfect! I also only cooked for about 8 minutes rather than 10.

Beer Dip I

I have made this twice now for parties and it was a big hit both times. I added green onion and used Sam Adams one time and Firestone Double Barrel Ale the second. I can't imagine this would be as flavorful with something like Bud or Coors. Also, you absolutely have to let it chill for at least 4-5 hours to achieve its serving consistency. Served with mini pretzels.

These were more cakelike and dry than I'd hoped, so I think I will try another recipe which calls for less eggs. To be fair, I do think I overcooked these bars though.

Colleen's Potato Crescent Rolls

I was drawn by the fact you can prepare this the night before. Halfway through the kneading process, I spontaneously snapped a branch of fresh rosemary out of the garden and added about 1.5-2 chopped tablespoons. It added a subtle kick and a little color. I also just formed into balls which I set in muffin tins, on the suggestion of a prior post. This reduced the work that much more! Only baked for about 11 minutes.

Cheesy Rosemary Potatoes

These are great and easy! The only change I made was to reduce the cheese from 2 cups to about 1 1/2 cups. I found them to be extra yummy with tabasco sprinkled on top once on my plate, but that of course is just a personal preference. Will make again, and maybe add some parmesan or bacon bits next time just to experiment.

Pigs in a Blanket

The surprise hit of our housewarming party! I used crescent rolls and skipped the cheese, and served with the hot mustard dipping sauce also from this site. This was the quickest appetizer to go, and it is astonishingly easy to make.

Hot Mustard Pretzel Dip

So easy and everyone at our party was impressed that it was "homemade". I served with pretzels, but everyone also dipped the Pigs In a Blanket that I made in it as well which was a great pairing.
