Midwest Loose Meats

These were tasty! I didn't use the oven. I did add extra broth and used sandwich rolls. The extra juice soaked into the roll and made it extra tasty. Very easy to make. All three of my teens enjoyed them, so I will be making this again.

Pineapple Bacon Burgers

Very good with a few changes. Grilled on stovetop using griddle. First grilled pineapple slices w/ a little brown sugar. Added onion soup mix to the the hamburger. Turkey bacon made in oven. Stacked everything on a whole wheat bun with a little extra bbq sauce. They were a hit.

Peanut Butter Chicken Skewers

I have been making this since 1997 when it first appeared in TOH magazine. It is fabulous. We often double the recipe, thin it out a little, and add it to spaghetti with the chicken on top. My entire family loves it. Next time I might thin it out with some coconut milk, but really it is delicious as written. I just wanted to update that I did use coconut milk instead of water and it was really delicious.

I was really looking forward to this. Way too salty. I think if you cut down on the soy sauce, or use light soy sauce, the other flavors will come out.

Reuben Hot Dish

My family loved this dish. I did precook the noodles and added thousand island dressing. I doubled the amount of bread and would probably add more next time.
