Applesauce Oatmeal Cookies

This is an awesome recipe. I adjusted it some for several reasons however... First I am sensitive to wheat so I use a mixture of white rice flour and multi grain whole grain flour mixture that is gluten free. I do still use the oats so not 100% gluten free but close. I don't use the butter at all. Instead I use an entire cup of applesauce. I also only use 1/3 cup brown sugar and double the Cinnamon and add nutmeg and ground cloves for added sweetness and spice!

Cinnamon-Roasted Almonds

Really yummy! Took the advice of other reviews and doubled the coating using vanilla instead of water and brown sugar instead of white sugar plus added nutmeg and cloves and cooked it a half hour longer for the crunch.

Salmon and Asparagus with Penne and Light Cream Sauce

I did this a little differently because of what I had on hand. I used zucchini instead of asparagus and I used about 3/4 whole milk with about 1/4 cup light mayo in place of the cream. I also used about 1/3 cup shredded cheddar instead.

Oatmeal and Applesauce Pancakes

These were really good from scratch pancakes. I adjusted the recipe though using only 2/3cup 100% whole wheat flour so they weren't so thick, used an entire cup of applesauce, used fat free plain yogurt in place of the sour cream, used an extra 1/2 tsp of baking powder and a little extra baking soda(as another review suggested), and added ground flaxseed. The oatmeal really stands out and tastes great. Perfect amount of sweetness and just the right amount of dense/fluffiness.

Sugarless Cookies II

I love these "cookies" but I also don't consider them cookies I think of them more as biscuits. I also add a lot more stuff too them, like more dried fruits and nuts.

Self Frosting Oatmeal Cookies

I liked these cookies a lot but I changed the recipe a bit. I only had about a 1/4c of brown sugar so I added cinnamon, nutmeg, ground cloves, and raisins to add some sweetness and spice. I only used about 2/3 cup oil and replaced 1/2 cup of the flour with whole wheat flour. The cookies stayed in their little ball form which meant I had to cook them for about 13 mins. but they were worth the extra little wait. I wouldn't say they self frost though however I did like the sugar coating on them so I'm pleased.

Baked Cheese Sticks

Changed quite a bit though. Used Light String Cheese, bread crumbs instead of corn flakes, used one entire egg instead of egg whites, and added basil and thyme. Baked for about 15 minutes

Country Scones

These were great scones! I made them with raisins and with chocolate chips both were exceptional. I even cut down on the fat and sugar by using 1/3c sour cream and 2/3 c nonfat plain yogurt, one egg instead of two egg yolks, and on the raisin ones I used cinnamon and ground cloves to top.

Chocolate-Oat Toffee Bars

I changed this recipe quite a bit from lack of chocolate chips and a desire to not have nuts in them so instead I put the toffee bits directly into the mix and baked. I also added a third more of the ingredients so I could make a 13x9 inch pan. Baked on 450 for 12 minutes and the smell of the melty toffee is tantalizing and the taste is awesome, not to sweet and nice and crunchy

Hamburger Buns

I enjoyed the ease of these buns and it is an easily adjustable recipe which is great. I cut the recipe in half used about 3/4 pre-baked acorn squash (which had some butter, brown sugar, cinnamon, and nutmeg on it), used brown sugar instead of white, and used 4 cups of 100% whole wheat. I did follow advice of others and let rise for about two hours. Dense but moist and fluffy as well.
