Stuffed Green Peppers I

This was a good recipe but I found the stuffing to be not enough. I even used only three peppers, they were very large but still next time I'll double the stuffing. I also used only one can of cream of mushroom soup instead of tomato soup and vegetable juice instead of tomatoes because my husband hates tomatoes. Never the less this turned out really well but I did use other reviewers tips like putting cheese and soup in the bottom of the peppers and slicing the peppers lengthwise, that is why I'm only giving 4 stars.

It's Chili by George!!

Good hearty chili. I did use vegetable juice instead of tomato and cut it by about a cup and I did replace the canned beans with a 15oz bag of dried black beans because that is what I had on hand, this added to the cooking time but definitely still really good.

Honey Cornbread

This is very exceptional cornbread. Super easy to make and really delicious. I did make a tiny adjustment since I didn't have any heavy whipping cream and wanted to cut down on the fat a little, I instead used 1/2c half and half and 1/2c 1% milk. I even probably could've gotten away with just using milk and it would have still been awesome.

Sour Cream Coffee Cake

Yummy! I love the crunchy topping it has like real coffee cake. I have made this a couple of times and found that yogurt works really well in place of the sour cream. I had peach on hand and it gave it a nice fruity sweetness without being over powering.

Tamale Pie II

I liked this recipe overall but I do have to agree with many of the other reviews that the cornmeal is a bit too much mush for my enjoyment. I even used about a third less than the recipe called for and put it in the oven to bake while I was making the filling. My husband also said he'd prefer if the cornmeal was a bit more sweet and not so bland. So yes I'll use this recipe again but I will probably leave out the bottom part of the cornmeal and just put it on the top with the cheese.

Beer Battered Onion Rings

I was really impressed with this recipe. I've never made onion rings before and was honestly not sure how good they would turn out. They looked nothing like the picture but I was ok with that. The oregano was a bit overpowering so next time I'll cut back on that and maybe try some cumin in it, cause cumin is good in everything. Overall though this recipe was awesome, nice crisp tasty rings and I even made some green pepper strips too. They even heated up the next day in the oven really well, no restaurant rings I've ever had have done that.

Beer Pancakes

These were really good, I love beer but am pregnant right now so I can't really enjoy it unless I cook with it. I did change these a bit to make them a bit more healthy though. I used 100% whole wheat flour, honey in place of sugar, and added frozen blackberries. The whole wheat made them a bit thick so I haded about a 1/4 cup of water to make them the right consistency for my family, we like them thin. Beer in pancakes such a good idea!

Tom Ka Gai (Coconut Chicken Soup)

I thought this was a great soup whether actual Tom Ka Gai or a mock version of it, this is good soup. I changed it some though due to lack of the proper ingredients and a desire to have more to it. I used powered ginger and lemon juice. I didn't use turmeric, green onions, or cilantro. I did however add bay leaves, a spoonful of sugar, red peppers, and celery. Really good!

Applesauce Oatmeal Cookies

This is an awesome recipe. I adjusted it some for several reasons however... First I am sensitive to wheat so I use a mixture of white rice flour and multi grain whole grain flour mixture that is gluten free. I do still use the oats so not 100% gluten free but close. I don't use the butter at all. Instead I use an entire cup of applesauce. I also only use 1/3 cup brown sugar and double the Cinnamon and add nutmeg and ground cloves for added sweetness and spice!
