Banana Crumb Muffins

Delicious! Make sure your bananas are super ripe and very large (or use 4 smaller bananas). I, like other reviewers, added 2 tsp vanilla to the banana mixture and 1 tsp cinnamon to the flour mixture. i also used white sugar instead of brown sugar and added chopped pecans to the topping, but the recipe would have no doubt been fabulous just as written!

Teriyaki Sauce and Marinade

My husband flipped over this sauce! I used regular white wine instead of mirin and ommitted the red pepper flakes, but I doubt either of these substitutions made a difference in the final product. I cut up some chicken thighes, sauteed them, and then tossed them in the sauce - delicious!

Brooke's Best Bombshell Brownies

These definitely stuck to the pans (I tried to make brownie bites using a mini cupcake pan and also made a regular 9x13" pan of them)! I will use cupcake wrappers or line the big pan with parchment paper next time, but there WILL be a next time. Even as a big pile of smushed brownie mess, these got amazing compliments from my husband, my girlfriends, and everyone else who tasted them. I will probably use brown sugar next time, just because I think anything chocolate needs brown, rather than white, sugar (I was out this time). All-in-all a PERFECT brownie recipe! YUM!!!

One Bowl Chocolate Cake III

This is the best chocolate cake recipe available, especially if you are looking for a light, airy, very chocolatey cake. I used the recipe to make cupcakes, and it made about 30 cupcakes with perfect domed tops and a very moist crumb. I used 1 c. white sugar and 1 c. brown sugar, added an extra 1/4 c. cocoa, and doubled the vanilla. Perfect!
