30-Minute Minestrone
My family really enjoyed this meal. We sprinkled some low-fat mozzarella on top and enjoyed it with some warm bread on the side. YUM!

The kids really liked the soup. Elisa was not to crazy about the spinach. We had bread on the side. Mozzie cheese on top was delish!
