Stuffed and Wrapped Chicken Breast

Perhaps it was the way it was made or cooked (by my roommate), but this dish turned out awful. All I could taste was cream cheese.

Easy Asparagus

The asparagus was good, but I always have problems when the instructions tell you to cook the onion, garlic etc. first. I love my asparagus very tender and this takes time - more time than the onion and garlic need. I would also use a flavored oil or a bit of butter. The purple onion was a great touch. Again, this dish was good, but it could be better.

Raspberry Trifle

This was very good, but I'm stingy with 5 star ratings. I used dessert cakes and a bag of frozen mixed berries. I poured a bit of water and a bit of chambord over the berries. This made a great sauce to drizzle over the cakes. I need to work a bit on my presentation, but the dessert itself turned out delicious.

Almond-Crusted Halibut Crystal Symphony

This was simply delicious. I added extra cream to the sauce so that there was plenty to drizzle over the halibut. The flavor was amazing and the almonds were such a nice touch.

Stuffed Mushrooms III

This recipe as written was rather bland. Per others recommendation, I decreased the amount of ricotta and added a bit of whipped cream cheese. I added my favorite spices to the cheese mixture, and it turned out delicious. While the filling was delicious after I doctored it up a bit, the mushrooms themselves came out bland. I recommend using a flavored oil or butter instead and sprinkling them with a bit of salt. You could also try dipping them in cooking sherry, although I'm not sure how well the flavor would go with the cheese. I will probably add a bit of goat cheese to the extra filling and see how it tastes stuffed in salmon.
