Mom's Buttermilk Pancakes

Buttermilk makes all the difference! These were great! One thing I will change for next time: either use unsalted butter, or omit the salt. I used salted butter and the recommended 1 tsp of salt and found them to be too salty. Very light and fluffy though. I used this recipe to make waffles.

Pineapple Upside-Down Cake II

I had no pineapple, but wanted to use up some frozen rasberries, so I substituted! The cake turned out so well, just a little funny looking. It was delicious! It was not as sweet as it would have been with pineapple, but the raspberries were nicely tart. I will try this recipe again with pineapple, as I found the cake to have great flavour and texture. The hint of cinnamon was good, even though I don't usually like cinnamon in my baked goods. Great recipe!

Curried Quinoa Salad with Mango

I made this following the recipe exactly and it was a big hit! The mango I used was not too soft, so the pieces held their shape in the salad. Next time I'd reduce the chicken stock a little, as it was a little salty. I made it again one night when I didn't have any mango, so I used some mandarin orange sections and added a few sauteed mushrooms too - a nice variation. A great way to add quinoa to your repertoire!

Ground Chicken Gumbo

Good, quick recipe. I didn't have everything on hand, so substituted carrots and zuccini for the celery and okra. Used some fresh tomatoes and a bit of tomato paste with water in place of the canned tomatoes. You could make many subtile adjustments and have a slightly different meal each time. Will save to my reipe box for sure! Thanks for posting.
